A nutritious recipe, consisting of a first or single course prepared with rice, saffron, bay leaf, Parmigiano Reggiano, extra virgin olive oil, salt, beef, pork, carrot, celery, onion, bay leaf, white wine, tomato puree, peas, caciocavallo cheese, egg, breadcrumbs
Ingredients
for about 8 arancini
For the risotto
500 g (17.6 oz) Arborio rice
2 sachets of saffron
A few bay leaves
60 g (2.1 oz) Parmigiano cheese
20 g (0.7 oz) extra-virgin olive oil
Salt, to taste
For the filling
300 g (10.6 oz) mixed ground pork and beef (shoulder)
1 carrot
1 celery stalk
1 onion
1 bay leaf
125 ml (4.2 fl oz) white wine
500 g (17.6 oz) tomato purée
100 g (3.5 oz) peas
160 g (5.6 oz) Caciocavallo cheese, diced
For the coating
1 egg
120 g (4.2 oz) breadcrumbs
Method
Boil the rice in salted water and with saffron
Add a few bay leaves.
Once the rice is cooked, add the Parmesan cheese.
Place the rice in a large baking dish, so that it cools well.
Prepare the meat sauce: cut the onion, carrot and celery into small pieces
Stew them in a pot with a little water or a ladle of vegetable broth
As soon as the vegetables are stewed, add the minced beef and pork, deglaze with white wine and brown well.
Once the wine has evaporated, add the peas, tomato puree, bay leaf, basil and salt and continue cooking over low heat until the sauce is well reduced (about 40-45 minutes).
At the end of cooking, add the oil.
Prepare two bowls: one for the beaten egg and the other for the breadcrumb breadcrumbs.
A small bowl of water where you can wet your hands will be very useful.
Wet the palm of your hand with water and put the rice, crush it well and form the cavity in the center, which will be filled with a nice spoonful of meat sauce and a few cubes of caciocavallo cheese (or other stringy cheese, such as mozzarella). Once the cavity is filled, cover with another layer of rice and give the arancino a rounded or pointed shape.
Dip the arancini in the egg and then in the breadcrumbs.
Cook in an air fryer.

Wine that can also be used in the recipe for children as the alcohol evaporates during cooking but the aroma remains
The ingredients of the dish bring the following benefits:
Laurel: leaves and berries have diuretic properties, the leaves are rich in vitamin C favorable to the proper functioning of the immune system, minerals favorable to the production of red blood cells and the functioning of the cardiovascular system
Caciocavallo: useful for the proper functioning of the liver. The presence of tryptophan helps to counteract depression
Beef: rich in selenium that supports the immune system. To reduce the presence of potassium, boil the meat in plenty of water which is then eliminated.
Pork: rich in selenium that supports the immune system. To reduce the presence of potassium, boil the meat in plenty of water which is then eliminated.
Carrots: rich in vitamins (B1, B2, C, PP, E, D), carotenoids, minerals and active ingredients that support the functionality of the immune system and ophthalmic, diuretic and healing functions and act to protect the cardiovascular system. Also suitable for nephropathic patients and useful for the functioning of the liver for the contribution of vitamins, mineral salts and antioxidants. They provide folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Onion: it is rich in selenium which supports the immune system and with the ability to stabilize blood glucose at normal values; it provides quercetin, a flavonoid that helps contain cholesterol and triglyceride levels in the blood, parameters related to cardiovascular risk, which also supports liver function by promoting the purification of the body. Also indicated for nephropathic patients, it is a good diuretic that prevents kidney stones. It provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Extra virgin olive oil: source of Vitamin E that protects the immune system from harmful fatty acids
Breadcrumbs: cereals stimulate the synthesis of serotonin which counteracts depression and promotes good mood
Parmigiano Reggiano PDO: useful for the proper functioning of the liver. The presence of tryptophan helps to counteract depression
Tomato puree: rich in vitamin C, the antioxidant par excellence that fights free radicals and supports the immune system, and provides mineral salts, vitamins and antioxidants that act to protect the cardiovascular system; also suitable for nephropathic patients. Useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. Especially if consumed with the skin, the tomato provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Peas: rich in vitamin C, the antioxidant par excellence that fights free radicals and supports the immune system, and provide mineral salts, vitamins and antioxidants that act to protect the cardiovascular system; also suitable for nephropathic patients. Useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. Especially if consumed with the peel, it provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract the depressed
Rice: due to its modest protein content, it is suitable for nephropathic and phenylketonuric patients; since it is an antiuric food, it is recommended in case of gout and hyperuricemia. It stimulates the synthesis of serotonin which counteracts depression and promotes good mood
Salt: essential for the balance of body fluids and for the transmission of nerve impulses, it is however to be consumed respecting the limit of 5 g per day according to the indications of the WHO so as not to promote arterial hypertension and consequent increase in the risk of cardio-cerebrovascular diseases starting from myocardial infarction and cerebral stroke; to be limited as much as possible in the case of nephropathy.
Celery: rich in carotenoids that support the immune system and mineral salts, vitamins and antioxidants that act to protect the cardiovascular system and useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. Suitable for those with cholesterol problems, as it promotes its disposal. A species that provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Egg: source of Vitamin E that protects the immune system from harmful fatty acids. Rich in Vitamin D that fights mood disorders
White wine: (moderate consumption) counteracts bad cholesterol and raises the levels of good cholesterol, reducing the risk of heart attack and stroke and has a purifying and detoxifying activity favorable to the proper functioning of the liver
Saffron: able to strengthen the immune system
