PRESENTATION
A first course made with penne, cherry tomatoes, mint, oregano, thyme, extra virgin olive oil, aubergine, courgettes, onion, garlic, Grana Padano DOP and salt.
INGREDIENTS:
Serves 4
8,5 oz whole wheat penne
5 oz cherry tomatoes
1 bunch each of mint, oregano, and thyme
3 tablespoons extra virgin olive oil
1 eggplant
2 courgettes
1 small onion
1 clove garlic
1,5 ox Grana Padano PDO
Salt
INSTRUCTIONS:
In a bowl, combine the chopped cherry tomatoes, chopped herbs, 2 tablespoons of oil, and a pinch of salt. Let it steep for 30 minutes.
The eggplant also needs to rest for 30 minutes, so after washing and dicing it, season it with salt and place it in a colander to remove its bitter liquid.
Chop the onion and garlic and sauté in a pan with the remaining oil. Wash and dice the zucchini and add them to the pan, along with the rinsed and dried eggplant.
Cook for about 10 minutes, stirring occasionally.
Add the tomatoes and turn off the heat.
Keep the sauce warm while you cook the whole-wheat penne in plenty of lightly salted boiling water.
Drain the pasta al dente and add it to the pan with the sauce, letting it steep for a few moments.
On a serving plate, add the Grana Padano PDO, cut into small cubes.
Garnish with basil leaves, mint, and thyme.
