Remove the chicken from the broth
Eliminate skin and bones
Mash the meat with a fork
Also add the onion previously cooked in the broth.
Filter the remaining broth and set aside 1 liter for the dough.
For the filling, finely chop the garlic and onion.
Peel the tomatoes and remove the seeds.
Brown the onion and garlic in butter
Add the tomatoes and oregano and simmer until the tomatoes are soft.
Add the chicken, mix well and season with chives, parsley and a little salt.
For the dough, boil the broth previously set aside in a pot and slowly add the flour, stirring quickly and continuously.
Simmer and stir quickly for another 10 minutes, until the dough comes off the sides of the pot.
Let the dough cool.
Take balls (about a tablespoon), flatten them with your hand and leave them slightly concave.
Spread a little filling into the cavity and close the dough tightly around it (as if to make an arancino).
Pay attention to keep the shape of the Coxinha (chicken leg).
Dip them in milk and breadcrumbs
Fry them in plenty of boiling oil.

Notes
To be prepared and handled under strict hygienic conditions.
The ingredients of the dish bring the following benefits:
Garlic: has immune-stimulating properties, promotes liver function and the elimination of waste metabolites. It also has hypocholesterolemic, lipid-lowering, antiplatelet, hypotensive and hypoglycemic properties that promote cardiac function.
Butter: source of fat-soluble vitamins (A, D, E and K) favorable to the health of the eyes, mucous membranes, bones, immune system and blood clotting.
Chicken meat: lean white meats are carriers of selenium that supports the immune system and free of saturated fats that do not compromise the functionality of the liver and circulatory system
Onion: it is rich in selenium which supports the immune system and with the ability to stabilize blood glucose at normal values; it provides quercetin, a flavonoid that helps contain cholesterol and triglyceride levels in the blood, parameters related to cardiovascular risk, which also supports liver function by promoting the purification of the body. Also indicated for nephropathic patients, it is a good diuretic that prevents kidney stones. It provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Chives: rich in carotenoids that support the immune system and mineral salts, vitamins and antioxidants, it acts to protect the cardiovascular system and liver function.
Flour: provides B vitamins (thiamine, niacin, riboflavin and folate), which are important for energy metabolism and the functioning of the nervous system.
Whole milk: provides vitamins, minerals and antioxidants, promoting metabolism, cardiovascular function, tooth and bone health. The presence of tryptophan helps to counteract depression. Provides and promotes the absorption of fat-soluble vitamins (A, D, E.K)
Oregano: provides antioxidants and vitamin E that are conducive to the proper functioning of the immune system
Breadcrumbs: cereals stimulate the synthesis of serotonin which counteracts depression and promotes good mood
Pepper (green, pink, black, gray, white): contains piperine, a powerful antioxidant; it improves insulin sensitivity by reducing cholesterol levels and activating metabolism. Recommended for people with cardiovascular problems.
Tomato: rich in vitamin C, the antioxidant par excellence that fights free radicals and supports the immune system, and provides mineral salts, vitamins and antioxidants that act to protect the cardiovascular system; also suitable for nephropathic patients. Useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. Especially if consumed with the peel, it provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Parsley: rich in carotenoids that support the immune system and mineral salts, vitamins and antioxidants that act to protect the cardiovascular system; also suitable for nephropathic patients and useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants
Salt: essential for the balance of body fluids and for the transmission of nerve impulses, it is however to be consumed respecting the limit of 5 g per day according to the indications of the WHO so as not to promote arterial hypertension and consequent increase in the risk of cardio-cerebrovascular diseases starting from myocardial infarction and cerebral stroke; to be limited as much as possible in the case of nephropathy.
