For 8 people – 1 openable mold diameter of 24 cm
Apples – 3 medium (≈ 450 g / 16 oz / ≈ 3 cups chopped)
“00” flour – 200 g (7 oz / ≈ 1½ cups)
Melted butter – 50 g (1.8 oz / ≈ 3½ tablespoons)
or Sunflower oil – 50 g (≈ 50 ml / 1.7 fl oz / ≈ 3½ tablespoons)
Granulated sugar – 150 g (5.3 oz / ≈ ¾ cup)
Eggs – 2 large, at room temperature
Cooking cream – 200 ml (6.8 fl oz / ≈ ¾ cup + 1 tablespoon), at room temperature
Baking powder – 1 sachet (16 g / 0.56 oz / 1 tablespoon)
Vanillin or vanilla seeds / extract – 1 sachet or seeds from 1 vanilla bean / 1 teaspoon extract
Grated lemon peel (optional) – from ½ lemon (≈ 1 teaspoon / 1–2 g)
Vanilla powdered sugar (before baking) – 2 tablespoons (≈ 16 g / 0.56 oz)
Ground cinnamon (before baking) – 1 generous teaspoon (≈ 3 g / 0.1 oz)
Powdered sugar (to sprinkle baked cake) – 1 tablespoon (≈ 8 g / 0.28 oz)
Method
Whip the eggs very well with sugar and vanilla and if you want lemon peel until frothy and light.
Add the cold melted butter and continue to mix with a whisk.
Add the flour by spoonfuls, mixed with the sifted baking powder, alternating it with the tablespoons of cream at room temperature.
Mix at medium speed, until all the ingredients are used up.
The raw dough must be full-bodied, velvety, not liquid or too fluid
Wash the apples, dry them, peel them and cut them into slices.
Place the dough in an openable pan, buttered and floured.
Level the dough
Arrange the apple slices in a radius, starting from the outside by sinking them slightly:
After the first round of apples, make a second round and finally the third, where you will place the apples in the center.
Occupy all the available spaces, trying to keep the “design” concentric, leaving the last apples slightly higher, without sinking them too much
Mix together icing sugar and cinnamon:
Sprinkle the surface of the apple pie
Bake in a static oven, hot, in the central part at 180 ° for about 45 minutes.
Remove from the oven, open the pan and let the cake cool
Sprinkle with icing sugar
Serve
