Notes
To be prepared and handled under strict hygienic conditions.
The ingredients of the dish bring the following benefits:
Capers: source of antioxidants capable of supporting the immune system, of rutin that strengthens capillaries and inhibits the formation of platelet aggregates, promoting the functionality of the cardiovascular system.
Fennel: favorable to the proper functioning of the cardiovascular system because they are rich in vitamin K, which helps protect the arteries and nitrates that reduce blood pressure, slow down the aging of the arteries, improve the functionality of the lining of blood vessels. A species that provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Lemon: Rich in substances with antioxidant action: vitamin C, beta-carotene, cryptoxanthin, lutein and zeaxanthin, which promote the regeneration of liver cells, the functionality of the immune system and which act to protect the cardiovascular system; also suitable for nephropathic patients and useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. A species that provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Walnuts: Zinc carriers, an element favourable to the proper functioning of the immune system; also suitable for nephropathic patients. Useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. Useful for the functioning of the liver for the supply of omega 3 and 6 fatty acids and vitamin E and rich in omega 3 fatty acids that fight the increase in blood pressure and the presence of bad cholesterol. Rich in magnesium and omega 3 fatty acids important for regulating mood and cognitive function
Extra virgin olive oil: source of Vitamin E that protects the immune system from harmful fatty acids
Wholemeal bread: source of fiber that supports the intestinal microbiota, improves intestinal transit and provides B vitamins and minerals that strengthen the immune system; also suitable for kidney patients. Cereals stimulate the synthesis of serotonin which counteracts depression and promotes good mood
Parmigiano Reggiano PDO: useful for the proper functioning of the liver. The presence of tryptophan helps to counteract depression
Parsley: rich in carotenoids that support the immune system and mineral salts, vitamins and antioxidants that act to protect the cardiovascular system; also suitable for nephropathic patients and useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants
Sea bass: provides zinc and selenium, elements that promote the proper functioning of the immune system by hindering the formation of prostaglandins that prevent proper cellular functioning and has a high content of omega 3 fatty acids, which inhibit platelet aggregation (cardiovascular risk factor). Useful for liver function due to the supply of zinc, selenium and omega 3 and 6 fatty acids. Essential fatty acids, such as omega 3 and 6, have an antidepressant effect and maintain efficient nervous system and memory.
