Second course made with chicken, potatoes, extra virgin olive oil, champignon mushrooms, lemon, wholemeal flour, crème fraîche, and mustard
Ingredients
Serves 2
Method
Pre-heat the oven to 180°C
Cut the potatoes into small pieces with the skin.
If you use white potatoes, boil them in salted water until soft: it should take more than 15-20 minutes.
If you use sweet potatoes, peel them and cut them into small pieces, add olive oil and bake them in the oven for 15-20 minutes, until they are soft (when boiling they absorb too much water).
In a pan, fry the chicken with the leek in two tablespoons of olive oil for 3 minutes
Add the mushrooms and lemon zest and continue cooking for 3 to 5 minutes.
Add the flour to thicken the sauce, stirring for about 2 minutes.
Add the water and mix in the lemon juice, crème fraîche and mustard, then remove from heat.
Once the potatoes are cooked, mash them with the rest of the olive oil.
Transfer the chicken by spoons to a baking dish or two ceramic cups and cover it with the mashed potatoes.
Bake in the oven for 10-15 minutes. If you like, you can grill the potatoes au gratin before serving.
