250 g (8.8 oz) green apples
80 g (2.8 oz) pomegranate
200 g (7.1 oz) carrots
4 radishes
1 sprig thyme
6 tablespoons balsamic vinegar
40 g (1.4 oz / 1.4 fl oz) extra-virgin olive oil

Method
Carve the radishes with a small knife and dip them in water and ice to make them easier to open.
Take the ostrich breast, degrease and salt

Tie it with kitchen twine to give it a regular shape.
Place the ostrich breast in a lightly greased baking dish and bake in the oven at 200°C. When the breast is pinkish in color, remove the pan from the oven and cover with aluminum foil.
Clean (removing the inedible part) the endive, wash it thoroughly and choose the leaves intact.
Clean the pomegranate and divide it into grains.
Peel the carrots and cut them into slices.
Immerse the carrots in boiling water for a few minutes
Drain them and let them cool.
Prepare the vinaigrette sauce by dissolving the salt with the balsamic vinegar in a bowl, pour in the oil slowly and stir with a whisk until the emulsion is complete.
Serve the ostrich breast cut into slices on a radial plate, surrounded by endive leaves with carrots and radish in the center.
Cut the apples (Golden Delicious) into wedges and place them between the endive leaves. Garnish with pomegranate seeds and season the appetizer with balsamic vinegar vinaigrette.

Ostrich meat: lean, rich in protein, iron and Omega-3, it provides selenium that supports the immune system.
Carrots: rich in vitamins (B1, B2, C, PP, E, D), carotenoids, minerals and active ingredients that support the functionality of the immune system and ophthalmic, diuretic and healing functions and act to protect the cardiovascular system. Also suitable for nephropathic patients and useful for the functioning of the liver for the contribution of vitamins, mineral salts and antioxidants. They provide folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Curly or Frisée Salad: salad source of carotenoids, chlorophyll and Vitamin E that protect the immune system from harmful fatty acids and mineral salts, vitamins and antioxidants that act to protect the cardiovascular system; also suitable for nephropathic patients.
