PRESENTAION
A nutritious first course prepared with Carnaroli rice, Prosecco wine, smoked scamorza cheese, onion, butter, and vegetable broth.
INGREDIENTS
Carnaroli rice: 400 g / 14 oz (about 2 cups)
Prosecco wine: 500 ml / 0.5 L / 17 fl oz (about 2 cups)
Smoked scamorza cheese: 200 g / 7 oz
Onion: 30 g / 1 oz (about ½ small onion)
Butter: 10 g / 0.35 oz (about 2 teaspoons)
Vegetable broth: 1 L / 34 fl oz (about 4¼ cups)
INSTRUCTIONS
Prepare the vegetable broth and keep it hot.
Cut the smoked scamorza into small cubes.
Finely chop the onion and sauté it gently in the butter until softened.
Add the rice and toast it, stirring continuously with a spoon.
Once the rice is well toasted and dry, deglaze with one ladle of Prosecco (about 120 ml / ½ cup).
Cook the risotto by adding one ladle of hot broth at a time, alternating with one ladle of Prosecco.
Allow each addition to evaporate before adding the next.
If possible, finish cooking using Prosecco rather than broth.
After about 20 minutes, when the risotto is creamy and fully cooked, add the cubed scamorza, stir briefly, and serve immediately.
