While the eggplant begins to cook, toast the rice in a separate pan.
Turn the rice over for a few minutes over medium heat.
When the rice is toasted, pour it into the pan containing the aubergine sauce.
Proceed to cook the risotto by adding spiced vegetable broth a ladle at a time.
Almost at the end of cooking, add the basil.

Useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. It provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Vegetable broth: check the composition for celery or other allergenic ingredients
Butter: milk allergens (except in clarified butter) if not clarified
Onion: possible reactivity in case of nickel allergy due to the vegetable’s ability to concentrate it
Aubergine: possible individual intolerance or cross-reactivity in case of grass allergy
Extra virgin olive oil: unusual allergy; intolerance not described
Chili pepper: possible cross-reactivity in case of intolerance to spices
Tomatoes: possible cross-reaction in case of sensitivity to grasses
Quartirolo lombardo: milk allergens
