A nutritious recipe, consisting of a first course prepared with flour, eggs, beef, veal, raw ham, Parmigiano Reggiano PDO, breadcrumbs, salt, pepper, nutmeg
Ingredients
for fresh pasta
Flour – 300 g (10.6 oz / ≈ 2½ cups)
Eggs – 3 large (≈ 150 g / 5.3 oz)
for the filling
Egg – 1 large (≈ 50 g / 1.8 oz)
Beef pulp – 50 g (1.8 oz)
Veal meat – 50 g (1.8 oz)
Lean raw ham – 50 g (1.8 oz)
Parmigiano Reggiano – 50 g (1.8 oz / ≈ ½ cup grated)
Breadcrumbs – 100 g (3.5 oz / ≈ 1 cup)
Salt – to taste (≈ ½ teaspoon)
Black pepper – to taste (≈ ¼ teaspoon)
Nutmeg – to taste (≈ ⅛ teaspoon)
Meat broth – to taste (≈ 200–500 ml / 1–2 cups, as needed)
Method
In a large bowl, pour the flour and create a well in the center.
Break 3 eggs and put them in the fountain.
Add salt and knead until you get a smooth and homogeneous dough.
Cover the dough with plastic wrap and put it to rest for about 30 minutes.
For the tortellini filling, put the minced veal and beef in a pan with a tablespoon of water.
Let it cook for about 10 minutes and then let it cool.
Then add the raw ham and blend
Add the grated Prmigiano Reggiano cheese, breadcrumbs and egg.
Season with salt, pepper and nutmeg.
Knead the dough with your hands so that the ingredients blend perfectly.
If the dough is too compact, then dilute it with a few tablespoons of hot broth.
To prepare the tortellini, roll out thin strips of dough from which you have to make squares with sides of about 2.5 cm.
Place the dough in the center of the square and form triangles.
Join two corners of the tortellini trying to use the little finger of your hand as a pivot.
Press lightly so that the two flaps remain together.
Then heat a liter of mixed meat broth (chicken and beef) and cook the tortellini for about 5 minutes.
