Egg – 1 whole (large)
Sunflower oil (or other neutral oil) – 1 tablespoon (15 ml / 0.5 fl oz)
Salt – a pinch (≈ 1 g / 0.03 oz)
Filling
Apples – 5 medium (≈ 800 g / 28 oz total)
Sugar – 3–4 tablespoons (≈ 40–50 g / 1.4–1.8 oz)
Raisins – 50 g (1.8 oz / ≈ ⅓ cup)
Pine nuts – 40 g (1.4 oz / ≈ ⅓ cup)
Rum – 3 tablespoons (45 ml / 1.5 fl oz)
Lemon zest (grated) – from 1 lemon (≈ 1 tablespoon)
Ground cinnamon – 1 teaspoon (≈ 2–3 g / 0.1 oz)
Melted butter – 50 g (1.8 oz / ≈ 3½ tablespoons)
Breadcrumbs – 80 g (2.8 oz / ≈ ¾ cup)
Powdered sugar – to finish (≈ 1–2 tablespoons)
Method
Peel the apples and cut them into small pieces. If you cut the apples too large they will come out of the filling!
Arrange the apples in a bowl with sugar, raisins, grated lemon peel, rum and cinnamon.
Mix well and set aside.
In a pan, toast the pine nuts very little and add them to the apples only after about 30 minutes of marinating.
In a bowl, place the flour and a pinch of salt
Make a hole in the center and add water, oil and egg.
Mix the center with a fork:
Proceed from the center, gradually incorporating flour
When the liquids are absorbed, knead with your hands, if necessary, adding flour.
Form a ball:
Let it rest for 2 – 3 minutes.
Use a baking paper as a base for rolling out the dough lightly dusted with flour.
Use a long, lightly dusted rolling pin and roll out slowly starting from the center and then lengthen the edges as well!
The dough must be about 2 mm thin and you will have to make a rather long and wide rectangle.
Make sure that the bottom and surface are always dusted with flour and not damp
Cut away a couple of cm of ends on the 4 sides so that they are shaped:
Melt the butter and let it cool
Brush the entire surface of the dough and add the breadcrumbs.
Add the marinated apple, raisin and cinnamon filling
Roll it out leaving about 2 cm of edge on the 4 sides:
Fold the two ends below and above the filling and then close the two side ends over
Roll up the strudel with the help of the baking paper
Roll up to the end, making the closure happen underneath.
Place the strudel in a baking tray lined with baking paper and brush with the remaining melted butter:
Bake in a preheated oven in the middle part at 180 ° for about 20 – 30 minutes.
Lower the temperature to 170° and continue for another 30 minutes
The strudel is ready when the golden crust is created on the surface
Remove from the oven and let cool for at least 3 – 5 hours
Sprinkle with icing sugar
Serve in slices.
