100 g (3.5 oz) spinach
2 eggs
250 g (8.8 oz) durum wheat flour
For the ragù
200 g (7.1 oz) ground beef
300 g (10.6 oz) peeled tomatoes
½ onion
1 carrot
1 celery stalk
100 ml (3.4 fl oz) white wine
For the béchamel sauce
50 g (1.8 oz) butter
500 ml (16.9 fl oz) milk
50 g (1.8 oz) durum wheat flour
For finishing
100 g (3.5 oz) Parmigiano Reggiano
10 g (0.35 oz) extra-virgin olive oil
Salt, to taste
Pepper, to taste
Nutmeg, to taste
Preparation
Start by preparing the meat sauce: finely chop the carrots, onion and celery
Put everything to fry with oil in a large pot.
After a few minutes, add the meat and let it brown well.
Deglaze with white wine and raise the heat slightly and let the alcohol evaporate completely.
Season the meat with salt and add the peeled tomatoes.
Let the sauce go for about an hour. If it dries out excessively, you can add water.
In the meantime, prepare the béchamel sauce: in a saucepan, melt the butter and add the flour.
Let the dough toast slightly and add the hot milk in a trickle, stirring
Continue stirring until creamy
For fresh pasta, boil the spinach in a pot with two tablespoons of water. Chop them finely and let them cool completely.
Add the spinach to the flour and eggs
Knead with your hands until you get a smooth and homogeneous dough
Cover it with plastic wrap and let it rest for about 30 minutes. After the necessary time, divide the dough into 6 equal parts.
Roll out the dough and try to get fairly long strips of dough, to be divided in half for the short side.
Put a pot of water on the stove and bring it to a boil
Cook the spinach pasta sheets for a few minutes and drain them.
For the composition of the baked pasta, put a tablespoon of meat sauce and one of béchamel sauce on the bottom of the baking dish so that the pasta does not stick.
Cover the bottom with the sheets of dough
Spread a layer of meat sauce.
Add the béchamel to taste and then sprinkle with grated parmigiano Reggiano. Repeat the layers in the same order until all the ingredients are used up.
Cover the last layer with the béchamel sauce and Parmigiano Reggiano
Bake at 180° for about 30 minutes.
Let the lasagna rest for at least an hour before serving.

Also suitable for nephropathic patients and useful for the functioning of the liver for the contribution of vitamins, mineral salts and antioxidants. They provide folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Onion: it is rich in selenium which supports the immune system and with the ability to stabilize blood glucose at normal values; it provides quercetin, a flavonoid that helps contain cholesterol and triglyceride levels in the blood, parameters related to cardiovascular risk, which also supports liver function by promoting the purification of the body. Also indicated for nephropathic patients, it is a good diuretic that prevents kidney stones. It provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Flour: provides B vitamins (thiamine, niacin, riboflavin and folate), which are important for energy metabolism and the functioning of the nervous system.
Whole milk: provides vitamins, minerals and antioxidants, promoting metabolism, cardiovascular function, tooth and bone health. The presence of tryptophan helps to counteract depression. Provides and promotes the absorption of fat-soluble vitamins (A, D, E.K)

Tomato: rich in vitamin C, the antioxidant par excellence that fights free radicals and supports the immune system, and provides mineral salts, vitamins and antioxidants that act to protect the cardiovascular system; also suitable for nephropathic patients. Useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. Especially if consumed with the peel, it provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Salt: essential for the balance of body fluids and for the transmission of nerve impulses, it is however to be consumed respecting the limit of 5 g per day according to the indications of the WHO so as not to promote arterial hypertension and consequent increase in the risk of cardio-cerebrovascular diseases starting from myocardial infarction and cerebral stroke; to be limited as much as possible in the case of nephropathy.
Celery: rich in carotenoids that support the immune system and mineral salts, vitamins and antioxidants that act to protect the cardiovascular system and useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. Suitable for those with cholesterol problems, as it promotes its disposal. A species that provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Spinach: rich in carotenoids that support the immune system and mineral salts, vitamins and antioxidants that act to protect the cardiovascular system; also suitable for nephropathic patients; useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants.
