A nutritious recipe, consisting of a dessert of US origin prepared with flour, dry yeast, salt, extra virgin olive oil, onion, poppy seeds, sesame seeds, pepper
Ingredients
For 6 people
For the dough:
Flour 250 g (8.8 oz)
Active dry yeast ½ teaspoon
Salt 1 teaspoon
Lukewarm water175 ml (5.9 fl oz)
Extra virgin olive oil 1 teaspoon
For the filling:
Extra virgin olive oil 2 teaspoons
Onions120 g (4.2 oz)
Poppy seeds1 tablespoon
Sesame seeds1 tablespoon
Coarse salt to taste
Freshly ground black pepper to taste
Method
Mix the flour and dry yeast in a bowl
Add the salt and mix.
Knead the mixture and gradually add the water.
Knead until you get a soft and elastic dough
Transfer the dough to a lightly oiled bowl and turn it over to grease it evenly.
Cover and let rise in a warm, draft-free place for 1.5-2 hours, or until it has doubled in size.
Transfer the dough to a floured surface and divide it into 6 equal parts.
Gently round off the dough pieces, making sure to leave as much air inside as possible. The surface should be smooth.
Place the bagels on a lined baking sheet,
Sprinkle them with flour
Cover them and let them rise in a warm place for another 2 hours, until they are almost doubled in size.
While waiting, heat the olive oil in a saucepan over medium heat, add the onion and sauté it slowly until it is transparent and slightly browned.
Set it aside for later use.
Preheat the oven to 230 °C just before the end of the rising time.
Once the dough has risen, create a cavity in the center of each bagel and give it a coarse shape.
Fill the cavities with sautéed onions and sprinkle the bialy with poppy and sesame seeds.
Sprinkle with a little coarse salt and freshly ground pepper
Bake them for 8-10 minutes, until golden brown.
Remove them from the oven and let them cool on a wire rack.
Leftover bialy can be easily frozen and reheated; they will stay fresh for only one day.
Allergens
Onion: possible reactivity in case of nickel allergy due to the vegetable’s ability to concentrate it
Flour: contains gluten from cereals included in EU Regulation 1169/2011
Dry yeast (Saccharomyces cerevisiae dehydrated): does not contain allergens
Extra virgin olive oil: unusual allergy; intolerance not described
Pepper (green, pink, black, grey, white): possible cross-reactivity in case of spice intolerance
Poppy seeds: known to rare cases of allergy
Sesame seeds: possible cross-reactivity in case of allergy to dried fruit
Notes
To be prepared and handled under strict hygienic conditions.
The ingredients of the dish bring the following benefits:
Onion: it is rich in selenium which supports the immune system and with the ability to stabilize blood glucose at normal values; it provides quercetin, a flavonoid that helps contain cholesterol and triglyceride levels in the blood, parameters related to cardiovascular risk, which also supports liver function by promoting the purification of the body. Also indicated for nephropathic patients, it is a good diuretic that prevents kidney stones. It provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Flour: provides B vitamins (thiamine, niacin, riboflavin and folate), which are important for energy metabolism and the functioning of the nervous system.
Dry yeast (Saccharomyces cerevisiae didhydrated): improves metabolism and helps strengthen the immune system
Extra virgin olive oil: source of Vitamin E that protects the immune system from harmful fatty acids
Pepper (green, pink, black, gray, white): contains piperine, a powerful antioxidant; it improves insulin sensitivity by reducing cholesterol levels and activating metabolism. Recommended for people with cardiovascular problems.
Salt: essential for the balance of body fluids and for the transmission of nerve impulses, it is however to be consumed respecting the limit of 5 g per day according to the indications of the WHO so as not to promote arterial hypertension and consequent increase in the risk of cardio-cerebrovascular diseases starting from myocardial infarction and cerebral stroke; to be limited as much as possible in the case of nephropathy.
Poppy seeds: rich in mineral salts (iron, copper, manganese, calcium and zinc) and phytosterols, which help lower the levels of “bad” cholesterol and have a calming effect on the nervous system, effective against anxiety, stress and insomnia, rich in vitamin E and B vitamins that promote metabolism.
Sesame seeds: source of vitamins and minerals, in particular B vitamins, potassium, iron and copper that promote hematopoiesis, fatty acids that support the cardiovascular system, vitamin E, selenium and manganese, polyphenols (antioxidants) that support the immune system. Rich in magnesium and omega 3 fatty acids important for regulating mood and cognitive function
