An ice cream prepared with donkey milk, milk similar to human milk and free of the allergenic properties of ruminant milk proteins, mixed with vegetable cream and chestnuts, sweetened with stevia

Ingredients

400 ml liquid or reconstituted donkey milk

150 g of vegetable cream

200 g boiled chestnuts or chestnut flour

20 g of stevia

Preparation

Boil the chestnuts

Extract the pulp

Combine ingredients.

Stir.

Stir in an ice cream maker until desired (20-30 minutes) or in the freezer with periodic stirring.

Allergens

• Possible cross-reaction in case of latex allergy

Notes

• For donkey milk, use pasteurized liquid milk or freeze-dried pasteurized donkey milk reconstituted at 10% (10 g of freeze-dried milk + 90 ml of water) to be reconstituted hot according to the manufacturer’s instructions.
• Sweetenable with erythritol.

Safety / Intended use

• Recommended in case of Anorexia, Mucositis, Xerostomia (dry mouth), Dysphagia
• Not to be administered in case of diarrhea
• Ice cream to be prepared in strict hygienic conditions because it has not been subjected to heat treatment before consumption.
