2 tablespoons clarified butter (ghee)
For the Sliced Polenta
400 ml (13.5 fl oz) water
100 g (3.5 oz) polenta (cornmeal)
40 g (1.4 oz) Parmigiano Reggiano (40% fat)
2 tablespoons (30 ml / 1 fl oz) extra-virgin olive oil
For the Tarragon Vegetables
500 g (17.6 oz) cherry tomatoes
600 g (21.2 oz) zucchini
25 ml (0.85 fl oz balsamic vinegar
½ onion
½ bunch fresh tarragon
Method
For the chicken saltimbocca, bone the chicken breasts, cut them into eight parts and season them. Cover them with sage leaves and form rolls wrapped in ham. Season them with salt and pepper and brown them in a pan until they are golden brown.
Finish cooking in the oven on a griddle at 130°C for about 25 minutes.
For the polenta, bring the water to a boil and gradually add the corn flour, stirring constantly.
Let it cook for about 1/2 hour over very low heat.
In the meantime, grate the Parmigiano Reggiano cheese and mix it with the polenta.
The polenta is ready when it comes off the sides of the pot when you stir it. Pour it onto a sheet of baking paper
Compress it slightly and cover it with a second sheet of baking paper. Spread the polenta between the two sheets of baking paper to a thickness of about 1 cm and let it cool.
Just before serving, cut the polenta into 8 portions, wetting the blade of the knife often.
Fry 4 slices at a time for 2 minutes in a pan.
Gently remove them from the pot with a spatula.
For the vegetables, wash the cherry tomatoes and cut them into quarters.
Cut the zucchini into quarters lengthwise, remove the seeds and chop finely.
Peel the onions, cut them into cubes and sauté them lightly.
Add the zucchini and cherry tomatoes.
Deglaze with balsamic vinegar and season to taste.
Garnish the vegetables with finely chopped tarragon leaves.
