Presentation
A nutritious recipe, consisting of a first course prepared with flour, egg and salt
Ingredients
(for 4 people)
300 g (10.6 oz) durum wheat flour
3 eggs
Salt, to taste
Method
In a large bowl, put the flour and create a well in the center.
Place the eggs and a pinch of salt in the center of the fountain.
Start kneading in the bowl, until the dough begins to be compact.
Transfer the dough to a work surface and start kneading it vigorously until it becomes smooth and homogeneous.
Cover the dough and let it rest for at least 30 minutes.
Then flour the work surface and divide the dough into 4 portions.
Cover 3 of them with a cloth and roll out one with a rolling pin.
Knead it to obtain a thin strip of dough.
To know if the thickness is okay, pass a hand behind the dough: if you can see it, it is the correct thickness.
Roll the dough on itself and cut it about the same size, in order to obtain tagliatelle as similar as possible.
