Dessert consisting of a tart prepared with flour, butter, sugar, egg, lemon peel, vanilla, salt, baking powder, fruit jam
Ingredients
for a 24 – 26 cm mold
330 g all-purpose flour + 1 teaspoon for dusting the work surface (about 11.6)
165 g soft butter (5.8 oz)
130 g granulated sugar (4.6 oz)
1 whole egg
2 egg yolks
Grated zest of 1 lemon
1 packet vanilla
A pinch of salt
½ very scant teaspoon baking powder
500 g apricot jam or any jam you prefer (17.6 oz)
Method
Prepare the dough, whipping the soft butter with sugar, salt and vanilla until you get a frothy cream
Add the eggs one at a time, whipping at high speed until you get a creamy and compact mixture.
Add the flour in one go with the sifted baking powder
Compact with a spatula and then with your hands
Sprinkle with flour, kneading as necessary to obtain a soft pastry dough that detaches from the work surface. If necessary, add a sprinkling of flour.
Sealed in film
Place in the fridge for 2 – 3 hours to harden
Keep it at room temperature for a few minutes and, if too hard, knead it just before working it
Roll out the shortcrust pastry to a thickness of about 4 mm, on a floured work surface
Lift the pastry sheet by rolling it up without applying too much pressure on the rolling pin and place it in the buttered and floured mold.
Make sure that the pastry adheres perfectly to the walls of the mold
Prick the bottom with the tines of a fork:
Pour the jam into a bowl and stir it well so that it is velvety
Pour it inside the shortcrust pastry shell up to 8-10 mm from the edge
Place the shell in the fridge and make the strips with the rest of the dough.
Let them cool in the refrigerator
Place the first strips
Cut off the excess dough.
Bake in a static oven, already hot in the middle part, at a temperature of 180 ° for the first 10 minutes.
Lower to 175° and continue cooking for another 25 – 30 minutes.
Remove from the oven, let it cool for 10 minutes then turn it out and let it cool for at least 2 hours.
