Presentation

Dessert of German origin prepared with quark, buttermilk, liquid sweetener , vanilla, gelatin, mango and lemon.

Ingredients
Serves 4

Mousse

• 200 g low-fat quark (less than 10% fat) (about 7 oz / ¾ cup)
• 75 ml buttermilk (about 2.5 fl oz / ⅓ cup)
• 5 ml liquid sweetener (about 1 teaspoon)
• Seeds from 1 vanilla bean
• 2 sheets white gelatin

Mango Purée

• 200 g mango (about 7 oz / 1½ cups diced)
• 2 ml liquid sweetener (about ½ teaspoon)
• 1 tablespoon lemon juice (about 15 ml / 0.5 fl oz)

Method

Mix together the low-fat quark, buttermilk, liquid sweetener and seeds of the vanilla bean.

Soften the gelatine in cold water for about 10 minutes

Squeeze it and transfer it to a saucepan.

Melt the gelatine over low heat while continuing to stir, preferably in a bain-marie.

When it has completely melted, add it to the quark mixture.

Distribute the mousse in equal parts in four glasses and let it cool.

To prepare the mango pulp, peel the mango, remove the pit and cut the fruit into small pieces.

Puree it with the liquid sweetener and lemon juice

Distribute the fruit puree in glasses with the cold mousse.

Allergens

Gelatin or isinglass is now derived from bovine and porcine collagen and is therefore not an allergen.

Buttermilk: milk allergens

Lemon: Lemon intolerance or possible cross-reaction in case of grass pollen allergy

Mango: rare allergy linked to the sap and not to the fruit

Quark: milk allergens

Vanilla: possible reactivity in case of sensitivity to spices

Quark: cheese useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. The presence of tryptophan helps to counteract depression. Contribution of useful flora, protection and proper functioning of the intestine.

Vanilla: it has favorable effects on liver function to have choleretic, digestive, eupeptic, stomachic, hepatoprotective, antihepatotoxic, spasmolytic properties of smooth muscle fibers.

Safety / Intended use

• Anorexia-weight loss
• Mucositis (inflammation and lesions of the oral cavity),
• Xerostomia (dry mouth)
• Dysphagia (Problems chewing and swallowing)

Not recommended in case of:

• Diarrhea
