Dry white wine: 100 ml (3.4 fl oz / ≈ ⅓ cup + 1 tbsp)
Salt: to taste (≈ ½ teaspoon)
Method
Remove the mussels from their beard.
Then put them in a pan with a drizzle of oil and cover them with a lid for a few minutes, until they have opened completely.
Remove the mussels and set aside.
In the same pan now pour the clams, which you have already left to drain overnight in salted water, and close with the lid for a few minutes.
When the clams have also opened, remove them and set them aside.
Filter any impurities with a fine mesh strainer and keep their cooking water.
Boil the scampi in plenty of water for about 4 minutes.
Then, cut the squid and shell the scampi and shrimp.
In a non-stick pan, fry the finely chopped onion in a drizzle of oil.
Add the heads and shells of the crustaceans and let them brown for a few minutes. Add the hot water and let the broth boil until it is reduced by about half. Tie the sauce with a tablespoon of flour and filter it through a fine mesh sieve.
In a pan, brown the garlic with a drizzle of oil and then add the squid. Let them cook for about 10 minutes.
Two minutes before the end of cooking the squid, add the scampi, shrimp and shelled mussels and clams.
Raise the heat slightly and deglaze with the white wine and the cooking water from the mussels and clams.
Fry half an onion with a drizzle of oil and add the peeled tomatoes.
When the sauce is cooked, pass it through a vegetable mill to obtain a velvety consistency.
Meanwhile, boil the spinach in plenty of water, let it cool and then, with a clean kitchen towel, squeeze the spinach and remove all excess water.
At this point, chop them finely.
Boil the broccoli tops for a few minutes, so that they remain crispy, and drain them.
Cut the pepper into cubes and sauté it in a pan for about 10-15 minutes
Cut beads from the yellow pumpkin, zucchini, potatoes and carrots. Once you have the beads, boil them for a few minutes and drain them.
Prepare the polenta, pouring the flour into the boiling water and continuing to stir until cooked
When ready to serve, divide the polenta into three: season the first portion with the spinach puree, the seafood sauce and fish, the second portion with the tomato sauce, peppers, seafood sauce and fish, while the third season with mussels and clams, seafood sauce and fish.
Decorate all three versions of polenta with the beads of boiled vegetables.

The ingredients of the dish bring the following benefits:
Garlic: has immune-stimulating properties, promotes liver function and the elimination of waste metabolites. It also has hypocholesterolemic, lipid-lowering, antiplatelet, hypotensive and hypoglycemic properties that promote cardiac function.
Broccoli: rich in mineral salts, vitamins C, B1, B2 and carotenoids that support the immune system and act to protect the cardiovascular system. Suitable in cases of chronic constipation due to the richness of vegetable fibers. A species that provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Squid: they are carriers of zinc and selenium, elements that promote the proper functioning of the immune system by hindering the formation of prostaglandins that prevent proper cellular functioning and has a high content of omega 3 fatty acids, which inhibit platelet aggregation (cardiovascular risk factor). Useful for the functioning of the liver for the supply of zinc, selenium and omega 3 and 6 fatty acids. Essential fatty acids, such as omega 3 and 6, have an antidepressant effect and maintain efficient nervous system and memory
Onion: it is rich in selenium which supports the immune system and with the ability to stabilize blood glucose at normal values; it provides quercetin, a flavonoid that helps contain cholesterol and triglyceride levels in the blood, parameters related to cardiovascular risk, which also supports liver function by promoting the purification of the body. Also indicated for nephropathic patients, it is a good diuretic that prevents kidney stones. It provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Mussels: containing vitamins, minerals and antioxidants favorable to the proper functioning of the immune system, liver and cardiovascular system. Essential fatty acids, such as omega 3 and 6, have an antidepressant effect and maintain efficient nervous system and memory.
Chives: rich in carotenoids that support the immune system and mineral salts, vitamins and antioxidants, it acts to protect the cardiovascular system and liver function.
Corn flour: provides zinc, an element favorable to the proper functioning of the immune system; also suitable for nephropathic patients
Shrimps: they provide zinc and selenium, elements that promote the proper functioning of the immune system by hindering the formation of prostaglandins that prevent proper cellular functioning and has a high content of omega 3 fatty acids, which inhibit platelet aggregation (cardiovascular risk factor). Useful for liver function due to the supply of zinc, selenium and omega 3 and 6 fatty acids. Essential fatty acids, such as omega 3 and 6, have an antidepressant effect and maintain efficient nervous system and memory
Extra virgin olive oil: source of Vitamin E that protects the immune system from harmful fatty acids
Potatoes: rich in carotenoids and vitamin C, the antioxidant par excellence that fights free radicals and supports the immune and cardiovascular systems. Useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. They provide folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Bell pepper: rich in vitamin C and carotenoids, antioxidant par excellence that fight free radicals and support the immune system, and mineral salts; also suitable for nephropathics, vitamins and antioxidants that act to protect the cardiovascular system. Useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. It provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Tomato: rich in vitamin C, the antioxidant par excellence that fights free radicals and supports the immune system, and provides mineral salts, vitamins and antioxidants that act to protect the cardiovascular system; also suitable for nephropathic patients. Useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. Especially if consumed with the peel, it provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Parsley: rich in carotenoids that support the immune system and mineral salts, vitamins and antioxidants that act to protect the cardiovascular system; also suitable for nephropathic patients and useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants
Salt: essential for the balance of body fluids and for the transmission of nerve impulses, it is however to be consumed respecting the limit of 5 g per day according to the indications of the WHO so as not to promote arterial hypertension and consequent increase in the risk of cardio-cerebrovascular diseases starting from myocardial infarction and cerebral stroke; to be limited as much as possible in the case of nephropathy.
Scampi: provides fats consisting of polyunsaturated fatty acids, such as eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), which are important for heart and brain health; Zinc and selenium, elements that promote the proper functioning of the immune system and liver.
Essential fatty acids, such as omega 3 and 6, have an antidepressant effect and maintain efficient nervous system and memory
Spinach: rich in carotenoids that support the immune system and mineral salts, vitamins and antioxidants that act to protect the cardiovascular system; also suitable for nephropathic patients; useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. They provide folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
White wine: (moderate consumption) counteracts bad cholesterol and raises the levels of good cholesterol, reducing the risk of heart attack and stroke and has a purifying and detoxifying activity favorable to the proper functioning of the liver
