Presentation
A second course consisting of a savory pie prepared with shortcrust pastry, red radicchio, onion, potato, ricotta, cheese, breadcrumbs and pepper
Ingredients
Shortcrust pastry – 1 roll (≈ 230 g / 8 oz)
Red radicchio – 2–3 handfuls (≈ 150 g / 5.3 oz)
Onion – 1 medium (≈ 100 g / 3.5 oz)
Potato – 1 medium (≈ 200 g / 7 oz)
Ricotta cheese – 100 g (3.5 oz / ≈ ½ cup)
Cheese (e.g., Fontina, Caciotta) – 30 g (1 oz / ≈ ¼ cup, grated or diced)
Breadcrumbs – to taste (≈ 1–2 tablespoons / 10–20 g)
Black pepper (optional) – to taste
Method
Boil the potato
Wash and slice the radicchio.
Slice the onion.
Unroll the shortcrust pastry.
Spread the coarsely mashed potato over the shortcrust pastry with a fork and mixed with the ricotta.
Eventually I can recommend adding a couple of tablespoons of breadcrumbs to give thickness to this potato and ricotta base, otherwise when you cut the slice and lift it it tends to bend.
Distribute the onion and finally the radicchio.
Decorate the surface with diced cheese
Complete with a sprinkling of breadcrumbs.
Add pepper if necessary
Bake at about 200 degrees for 20-25 minutes.
