Ingredients
For 6 people
1 piece of beef for roast beef, about 1 kg (35.3 oz)
40 g (1.4 oz) softened butter
1 bunch fresh parsley
1 bunch fresh coriander
1 bunch fresh mint
30 g (1.1 oz) blanched almonds
2 tablespoons coriander seeds
2 sheets ready-rolled puff pastry or 250 g (8.8 oz) puff pastry from a bakery
1 egg
Freshly ground black pepper, to taste
Method
Season the meat with pepper and brown it in a pan with butter for 7 minutes. Wrap it in aluminum foil and let it cool.
In the meantime, wash and drain the herbs.
Chop them all together with a knife or blender.
Add the almonds, coriander seeds, pepper and mix again. Preheat the oven to 200 °C
Unroll the puff pastry sheets, moisten them with a brush and overlap them, or roll out the dough to 4-5 mm thick, giving it the shape of a rectangle. Sprinkle the pasta with half of the herbs, then transfer the cold meat to it and finish with the remaining herbs.
Fold the left and right side of the dough over the meat
Brush the edges with egg white and seal them well together at the ends.
Use the excess dough to create decorations, to be brushed with egg white. Then glaze all the dough with the egg yolk.
Before cooking, leave the roast beef in the refrigerator for 5 minutes.
Bake for 15 minutes at 220 °C, then lower the temperature to 190 °C and continue cooking for another 13 minutes.
After removing the roast beef from the oven, wait a few minutes before cutting and serving.
