Presentation
A nutritious recipe, consisting of a second course of German origin prepared with pork, salt, pepper, mustard, extra virgin olive oil, onion, tomato paste, beer, garlic, orange, honey, paprika, cinnamon, cloves, juniper, allspice, salt, pepper, meat broth
Ingredients
For 6 people
1200 g pork for roasting (42.3 oz)
Salt – to taste
Pepper – to taste
1 tablespoon mustard
3 tablespoons extra virgin olive oil
1 bunch of herbs and vegetables for flavoring the broth
1 medium onion
1 tablespoon of tomato paste
1/2 liter of dark beer
2 cloves of garlic
1 orange
1 tablespoon of honey
1 teaspoon of paprika powder
1/4 teaspoon cinnamon
4 cloves
4 juniper berries
4 allspice berries
Salt
Pepper
1/2 liter of meat broth
Method
Finely chop the herbs and vegetables with the onion.
Clean the meat, season it with salt and pepper and massage it with mustard.
Heat the oil and brown the roast on all sides.
Remove it from the pot and sauté the herbs, vegetables and finely chopped onions.
Add the tomato paste and dark beer.
Add the garlic, finely chopped orange, honey and spices, stir and return the roast to the pot.
Fill with the broth and simmer for 1.5 hours.
Remove the roast from the pot and set it aside for a few moments before cutting it, so that it remains juicy.
Strain the sauce, let it thicken and season it to taste.
We recommend serving the roast with a salad or our cabbage puree (in the next recipe).
Attention: Since the meat is cooked “au jus” (in its juices) and the sauce is prepared from these juices, this dish contains a lot of potassium. You can reduce the intake by not eating the sauce. Alternatively, you can cook the roast with vegetables in at least a liter of liquid. This way you don’t use the juices from the meat and serve a light sauce, e.g. sautéed onions with crème fraîche.
Allergens
Garlic: very rare cases of garlic reactivity reported
Orange: possible individual intolerance; possible cross-reaction in case of grass pollen allergy
Beer: presence of barley, hops and wheat included among the allergens in EU Regulation 1169/2011
Meat broth: check the composition for celery or other allergenic ingredients
Cinnamon: possible reactivity in case of intolerance to spices
Cloves: possible, albeit rare, cases of allergy
Onion: possible reactivity in case of nickel allergy due to the vegetable’s ability to concentrate it
Tomatoes: possible cross-reaction in case of sensitivity to grasses
Juniper: specific allergy even if mainly concerning pollen
Honey: possible reaction in case of pollen allergy
Extra virgin olive oil: unusual allergy; intolerance not described
Paprika: possible cross-reactivity in case of intolerance to spices
Pepper (green, pink, black, grey, white): possible cross-reactivity in case of spice intolerance
Allspice (allspice): possible allergy from direct contact on the skin
Mustard: included among the allergens in EU Regulation 1169/2011
Notes
To be prepared and handled under strict hygienic conditions.
Beer that can also be used in the recipe for children as the alcohol evaporates during cooking but the aroma remains
The ingredients of the dish bring the following benefits:
Garlic: has immune-stimulating properties, promotes liver function and the elimination of waste metabolites. It also has hypocholesterolemic, lipid-lowering, antiplatelet, hypotensive and hypoglycemic properties that promote cardiac function.
Oranges: provide flavonoids (Vit. P), antioxidants that enhance the action of Vit. C in favor of the immune and cardiovascular systems: also indicated for nephropathic patients; useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. They provide folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Beer: increases good cholesterol levels, prevents the onset of cardiovascular disease, decreases the risk of diabetes, promotes kidney function
Meat broth source of proteins, minerals, amino acids, vitamins and antioxidants favorable to the proper functioning of the immune system
Cinnamon: able to strengthen the immune system
Pork: rich in selenium that supports the immune system. To reduce the presence of potassium, boil the meat in plenty of water which is then eliminated.
Cloves: rich in antioxidants that can strengthen the immune system
Onion: it is rich in selenium which supports the immune system and with the ability to stabilize blood glucose at normal values; it provides quercetin, a flavonoid that helps contain cholesterol and triglyceride levels in the blood, parameters related to cardiovascular risk, which also supports liver function by promoting the purification of the body. Also indicated for nephropathic patients, it is a good diuretic that prevents kidney stones. It provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Tomato: rich in vitamin C, the antioxidant par excellence that fights free radicals and supports the immune system, and provides mineral salts, vitamins and antioxidants that act to protect the cardiovascular system; also suitable for nephropathic patients. Useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. Especially if consumed with the peel, it provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Juniper (berries): has diuretic properties; the extract is used in cases of liver dysfunction (chronic hepatitis, liver failure, liver cirrhosis, hypertrophic alcoholic cirrhosis, hepatic colic); in case of renal dysfunction (renal failure, water retention, lipoid nephrosis, oliguria, gout), in case of diabetes mellitus, hypercholesterolemia, and arteriosclerosis.
Honey: it has a composition that performs anti-anaemic and cardiotropic, detoxifying and protective action on the liver, diuretic.
Extra virgin olive oil: source of Vitamin E that protects the immune system from harmful fatty acids
Paprika: rich in vitamin C, the antioxidant par excellence that fights free radicals and supports the immune system
Pepper (green, pink, black, gray, white): contains piperine, a powerful antioxidant; it improves insulin sensitivity by reducing cholesterol levels and activating metabolism. Recommended for people with cardiovascular problems.
Allspice (allspice): promotes gastrointestinal function
Salt: essential for the balance of body fluids and for the transmission of nerve impulses, it is however to be consumed respecting the limit of 5 g per day according to the indications of the WHO so as not to promote arterial hypertension and consequent increase in the risk of cardio-cerebrovascular diseases starting from myocardial infarction and cerebral stroke; to be limited as much as possible in the case of nephropathy.
Mustard: able to strengthen the immune system; also suitable for nephropathic patients
