Presentation
A first course based on gnocchi made with potatoes, egg and flour
Ingredients
(for 6 people)
Potatoes – 1 kg (35.3 oz / ≈ 2.2 lb)
Egg – 1 large
Flour “0” (or protein-free flour) – 300 g (10.6 oz / ≈ 2½ cups)
Method
Peel the potatoes and cook them in plenty of water. Once cooked, drain well, pass through a potato masher and mix with the sifted flour and egg.
Sprinkle the work surface with flour (or protein-free flour depending on the version prepared) to prevent the dough from sticking and knead the mixture until soft.
Cut out finger-thick loaves from the dough and then cut the loaves into small pieces of 3 cm each.
Pass the fresh gnocchi on the teeth of a fork to obtain the characteristic grooves on the surface (it is not essential, but it allows you to better absorb the sauce).
Cook the gnocchi in boiling water, collecting them with a slotted spoon as soon as they rise to the surface.
The traditional Veronese Carnival recipes require that the gnocchi obtained are seasoned with a horse meat sauce.
However, they can be safely seasoned with an excellent tomato sauce.
