Presentation
A nutritious recipe, consisting of a second course of Spanish origin prepared with salmon, onion, pepper, lemon, extra virgin olive oil, dill, garlic
Ingredients
For 2 people
2 salmon fillets
1 onion
1 red bell pepper
1 yellow bell pepper
1 slice of lemon
Extra-virgin olive oil, to taste
Spices, to taste (such as dill and garlic)
Method
Wash and julienne all the vegetables
Brown them in a pan with a drizzle of oil, until they are slightly softened.
Take a large sheet of aluminum foil, spread a little oil and place the sautéed vegetables and, on top, the salmon fillets (without skin and bones).
Add half a slice of lemon on top of the salmon fillets
Sprinkle a little dill, garlic powder and a drizzle of oil (or other spices to taste).
Cover everything with another slightly larger aluminum foil, always greased with oil and close the 4 sides very well, avoiding openings, so that the fish can cook with the steam that is generated.
Bake on a baking sheet in the oven at 190° for 12–16 minutes.
Serve immediately
Allergens
Garlic: very rare cases of garlic reactivity reported
Dill: can cause contact allergy and cross-reaction for allergy to Artemisia pollen
Onion: possible reactivity in case of nickel allergy due to the vegetable’s ability to concentrate it
Lemon: Lemon intolerance or possible cross-reaction in case of grass pollen allergy
Extra virgin olive oil: unusual allergy; intolerance not described
Peppers: possible individual intolerance or cross-reactivity in case of allergy to grasses
Salmon: fish is included among the allergens in EU Regulation 1169/2011
Notes
To be prepared and handled under strict hygienic conditions.
The ingredients of the dish bring the following benefits:
Garlic: has immune-stimulating properties, promotes liver function and the elimination of waste metabolites. It also has hypocholesterolemic, lipid-lowering, antiplatelet, hypotensive and hypoglycemic properties that promote cardiac function.
Dill: able to increase diuresis
Onion: it is rich in selenium which supports the immune system and with the ability to stabilize blood glucose at normal values; it provides quercetin, a flavonoid that helps contain cholesterol and triglyceride levels in the blood, parameters related to cardiovascular risk, which also supports liver function by promoting the purification of the body. Also indicated for nephropathic patients, it is a good diuretic that prevents kidney stones. It provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Lemon: Rich in substances with antioxidant action: vitamin C, beta-carotene, cryptoxanthin, lutein and zeaxanthin, which promote the regeneration of liver cells, the functionality of the immune system and which act to protect the cardiovascular system; also suitable for nephropathic patients and useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. A species that provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Extra virgin olive oil: source of Vitamin E that protects the immune system from harmful fatty acids
Bell pepper: rich in vitamin C and carotenoids, antioxidant par excellence that fight free radicals and support the immune system, and mineral salts; also suitable for nephropathics, vitamins and antioxidants that act to protect the cardiovascular system. Useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. It provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Salmon: a source of zinc and selenium, elements that promote the proper functioning of the immune system by hindering the formation of prostaglandins that prevent proper cellular functioning, and has a high content of omega 3 fatty acids, which inhibit platelet aggregation (cardiovascular risk factor). Useful for liver function due to the supply of zinc, selenium and omega 3 and 6 fatty acids. Essential fatty acids, such as omega 3 and 6, have an antidepressant effect and maintain efficient nervous system and memory
