A nutritious recipe, consisting of a baked product prepared with licolì, kefir, flour, extra virgin olive oil, spinach, garlic, Gorgonzola, walnuts, pepper, Fontal cheese, Parmigiano Reggiano PDO cheese, pine nuts
Ingredients
for the bread
200 g liquid sourdough starter (7.1 oz)
150 g water (5.3 oz)
100 g kefir (3.5 oz)
480–500 g Italian type 0 flour (16.9–17.6 oz)
15 g extra-virgin olive oil (0.5 oz)
For the spinach, walnut and gorgonzola filling
400 g fresh spinach (14.1 oz)
1 clove of garlic
100 g spicy Gorgonzola (3.5 oz)
4–5 walnuts
Black pepper, to taste
1 tablespoon extra-virgin olive oil
For the mixed herbs and cheese filling
300 g mixed greens (spinach and chicory) (10.6 oz)
150 g Fontal-style cheese (5.3 oz)
2–3 tablespoons grated Parmigiano Reggiano PDO
1 clove of garlic
toasted pine nuts (optional)
1 tablespoon extra-virgin olive oil
Method
Dissolve the levain in the water
Add the oil and kefir
Add the flour and knead until you get a soft and elastic dough.
Put the dough to rise for 3-4 hours in a bowl covered with plastic wrap and in a sheltered place
After rising in the fridge, remove the dough from the fridge and leave it at room temperature for a few hours (usually 4-5 hours).
In the meantime, prepare the filling:
Cook the spinach for about ten minutes in a pot with only the draining water and with the lid closed.
Take the spinach, drain them from the water they have produced, and sauté them in a pan with a clove of minced garlic and a little oil until they are dry.
Roll out the leavened dough on a pastry board and obtain a rectangle of dough that is not too thin (no less than 1 cm).
If necessary, flour the cutting board and the dough.
Spread the sautéed spinach, the cheese cut into small pieces, the walnuts, pine nuts and Parmigiano Reggiano cheese if provided, and a sprinkling of pepper on the pasta
Proceed with the rolling:
Place the roll on a baking sheet covered with parchment paper, then close it to form the bread crown:
Before baking, let the crown rest for about half an hour.
Bake in the oven at 180 degrees for about 30 minutes.
Enjoy hot, warm or cold.
