A nutritious main course prepared with turkey breast, spinach, pistachios, mortadella, Port wine, broth, garlic, black pepper, and extra virgin olive oil.
INGREDIENTS:
Turkey breast (whole, butterflied): 750 g / 1.65 lb
Cooked spinach: 3 tablespoons (≈45 g / 1.6 oz)
Unsalted pistachios: 2 tablespoons (≈20 g / 0.7 oz)
Mortadella: 2 slices (≈40 g / 1.4 oz)
Port wine: 1 small glass (≈60 ml / 2 fl oz)
Broth (meat or vegetable) or water: 1 cup (≈240 ml / 8 fl oz)
Garlic: 1 clove
Black pepper: to taste
Extra virgin olive oil: to taste (about 1 tablespoon / 15 ml / 0.5 fl oz)
METHOD
Wash the spinach and place it in a pot using only the water retained from washing.
Cook covered for no more than 10 minutes.
Sauté the cooked spinach in a pan with 1 clove of garlic to enhance flavor and remove excess moisture.
Place the turkey breast on a cutting board and open it into a pocket.
Spread the spinach evenly over the turkey.
Distribute the pistachios over the spinach.
Cover with the slices of mortadella.
Close the turkey breast like a book and tie it securely with kitchen twine.
Brown the meat in a pan with very little olive oil over medium-low heat for 10–15 minutes.
Cover with a lid and cook over low heat for about 40 minutes.
During cooking, turn the roast occasionally and moisten with hot broth or water as needed.
Deglaze with Port wine.
Cover again and cook for a few additional minutes.
Serve sliced, with its cooking juices.
