Presentation
First course based on potatoes, field chicory, artichokes, tomatoes, onion, garlic, chilli, mint, eggs, bread, salt and extra virgin olive oil.
Ingredients
for 4 people:
400 g potatoes (14 oz)
300 g wild chicory (field chicory) (10.5 oz)
4 artichokes (about 200 g once cleaned) (7 oz)
100 g ripe tomatoes (3.5 oz)
100 g onion (3.5 oz)
3–4 cloves of garlic
chilli pepper, to taste
mint
4 eggs
200 g unsalted bread (7 oz)
40 g extra-virgin olive oil (1.4 oz)
Method
Put in a pot, with only water and salt, the potatoes peeled and cut in half, the artichokes cleaned and cut in half, 3-4 whole cloves of garlic, the onions cut into slices, the mint, the chilli pepper and the chopped tomatoes.
Cook for about 1 hour.
If you use wild chicory, you will have to blanch it separately for a few minutes to eliminate the bitter taste, not everyone likes.
Add it later to the preparation.
If you use the cultivated one, you can add it right from the start.
At the end of cooking, add one egg per person, cooked “poached” in the broth of the same soup.
During cooking, you must pay attention to maintaining a certain amount of liquid by adding hot water.
When cooked, pour the broth over the bread, making sure that all the ingredients are present for each dish.
Let it rest for a few minutes with the plate covered, so that the bread can wet properly, then throw away the liquid not absorbed by the bread and sprinkle the soup abundantly with extra virgin olive oil.
