Presentation
Baba ganoush is a Middle Eastern appetizer, a creamy dip made from eggplant seasoned with sesame sauce (tahini), garlic, olive oil, and flavored with fresh parsley, mint, or coriander.
Ingredients
- 2 medium black eggplants (about 600 g)
- 50 g tahini (45 g sesame + 1 tablespoon of water + 1 lemon)
- Juice of 1 lemon
- 1 clove of garlic
- Fresh parsley, mint, or coriander
- Salt to taste
- 2 tablespoons extra virgin olive oil
Preparation
- Wash and dry the eggplants.
- Make cuts or poke holes with a fork so that the inside cooks well and the bitter liquid can escape.
- Roast the eggplants whole in the oven at 180°C for about 1 hour, until they are soft and dark.
- Let them cool.
- Cut the eggplants in half lengthwise, and with a spoon, scoop out all the pulp, placing it to drain for 30 minutes on a paper towel in a colander.
- After 30 minutes, blend the pulp with tahini, lemon juice, and the peeled and crushed garlic.
- Adjust the salt and add a drizzle of olive oil.
- Garnish with the chosen herb and a drizzle of olive oil, and serve.
Allergens
