Method
Peel the potatoes and boil them in salted water for 25-30 minutes in a covered pot. Drain them, wait for them to cool down and mash them with a potato masher. Peel the wild garlic, cut it into small pieces and finely puree it with milk.
Stir in the milk and wild garlic into the puree with 15 g of butter.
Season with salt, pepper and nutmeg.
In the meantime, peel the cabbage
Cut it into quarters and remove the core.
Cut the cabbage crosswise into strips 1 cm wide.
Peel the leeks and cut them into 1/2 cm rings.
Heat 20 g of butter and oil in a large pot.
Add the cabbage, leeks and cumin and sauté them stirring for about 3-4 minutes. Season with salt and pepper. Grease a mold of about 1.5 liters.
Spread the cabbage and leek mixture evenly in the mold.
Mix the eggs, vegetable broth, cream and mustard until smooth and pour over the cabbage.
Transfer the mashed potatoes to a piping bag without a tip and form thick strips, close to each other, on top of the cabbage mixture.
Level the puree with a wooden spoon, then prick it several times with the handle of a spoon.
Chop the sunflower seeds not too finely.
Melt the remaining butter in a saucepan.
Add the sunflower seeds and breadcrumbs and mix.
Spread the breadcrumbs evenly over the casserole.
Bake in a preheated oven at 200 °C (ventilation is not recommended) in the lowest position for 25-30 minutes, until the flan is golden brown.
After 15 minutes, cover with aluminum foil, if necessary.
Let it rest for 5-7 minutes on a wire rack
Serve.

Notes
To be prepared and handled under strict hygienic conditions.
Tip: To reduce the potassium content, leave the potatoes in water before cooking.
The ingredients of the dish bring the following benefits:
Garlic: has immune-stimulating properties, promotes liver function and the elimination of waste metabolites. It also has hypocholesterolemic, lipid-lowering, antiplatelet, hypotensive and hypoglycemic properties that promote cardiac function.
Vegetable broth: provides minerals, especially sodium and potassium, useful for regulating heart function and water retention.
Butter: source of fat-soluble vitamins (A, D, E and K) favorable to the health of the eyes, mucous membranes, bones, immune system and blood clotting.
Cabbage: rich in vitamins A and K that help the liver in purification activities and powerful natural anti-inflammatory, able to prevent and alleviate inflammatory and heart diseases. Also suitable for nephropathics. Useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. A species that provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression. Vitamin E strengthens the immune system, has a preventive function against many cancers and protects the digestive mucous membranes.
Cumin: the beneficial effects attributed by Indian medicine to cumin in case of diarrhea and kidney stones are not recognized
Whole milk: provides vitamins, minerals and antioxidants, promoting metabolism, cardiovascular function, tooth and bone health. The presence of tryptophan helps to counteract depression. Provides and promotes the absorption of fat-soluble vitamins (A, D, E.K)
Nutmeg: source of vitamin A, carotenoids and manganese with antioxidant properties favorable to the proper functioning of the immune system
Extra virgin olive oil: source of Vitamin E that protects the immune system from harmful fatty acids
Breadcrumbs: cereals stimulate the synthesis of serotonin which counteracts depression and promotes good mood
Cream: source of fat-soluble vitamins (A, D, E and K) favorable to the health of the eyes, mucous membranes, bones, immune system and blood clotting.
Potatoes: rich in carotenoids and vitamin C, the antioxidant par excellence that fights free radicals and supports the immune and cardiovascular systems. Useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. They provide folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Pepper (green, pink, black, gray, white): contains piperine, a powerful antioxidant; it improves insulin sensitivity by reducing cholesterol levels and activating metabolism. Recommended for people with cardiovascular problems.
Leek: contains ingredients favorable to diuresis and antioxidants favorable to the functioning of the cardiovascular system and immune system
Salt: essential for the balance of body fluids and for the transmission of nerve impulses, it is however to be consumed respecting the limit of 5 g per day according to the indications of the WHO so as not to promote arterial hypertension and consequent increase in the risk of cardio-cerebrovascular diseases starting from myocardial infarction and cerebral stroke; to be limited as much as possible in the case of nephropathy.
Poppy seeds: rich in mineral salts (iron, copper, manganese, calcium and zinc) and phytosterols, which help lower the levels of “bad” cholesterol and have a calming effect on the nervous system, effective against anxiety, stress and insomnia, rich in vitamin E and B vitamins that promote metabolism.
Mustard: able to strengthen the immune system; also suitable for nephropathic patients
Egg: source of Vitamin E that protects the immune system from harmful fatty acids. Rich in Vitamin D that fights mood disorders
