A nutritious recipe, consisting of a second course prepared with chickpea flour, carrots, thyme, marjoram, garlic, extra virgin olive oil
Ingredients
100 g chickpea flour (3.5 oz)
200 g water (7.1 oz / ¾ cup)
120 g carrots (4.2 oz)
Thyme, to taste
Marjoram, to taste
1 clove garlic
1 teaspoon extra-virgin olive oil (optional)
Extra-virgin olive oil, as needed (for brushing the pan)
Method
Pour the chickpea flour into the water and stir well to dissolve it.
Let the batter rest for at least a couple of hours, but possibly even longer.
Add a little oil to the batter (optional).
Grate the carrots or slice them into julienne strips.
Once the carrots have been grated (or cut into julienne), you can proceed in two ways.
Add the grated carrots to the chickpea batter (after resting) and add the herbs and chopped garlic to the mixture.
Or sauté the carrots in a pan with minced garlic, aromatic herbs and a drizzle of oil for a few minutes to flavor and wilt slightly, then let them cool then add them to the batter.
Pour the chickpea and carrot flour mixture by spoonfuls onto a preheated pan and brushed with a little oil.
Cook the carrot omelettes for a few minutes on each side.
The cooking time varies depending on the thickness of the omelettes.
Serve hot, warm or cold.
