Presentation
Baked goods consisting of cookies made with eggs, sugar, salt, baking soda, potato starch, butter, and lemon.
Ingredients
(for 40 cookies)
1 egg
140 g sugar
1 pinch of fine salt
1 pinch of baking soda
200 g rice flour
50 g potato starch
100 g butter
Lemon zest
Preparation
Crack the egg into a bowl.
Add the sugar, a pinch of salt, and the baking soda.
Mix the ingredients with a fork.
Grate the zest of a lemon or add your preferred flavoring: vanilla, cinnamon, or orange zest.
Mix everything together.
Add the cold butter in small pieces, the rice flour, and the potato starch.
Use your hands to knead the shortcrust dough until you form a compact ball. Avoid overworking the dough to keep the cookies from becoming hard when baked.
Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
After resting, roll out the dough on a work surface.
Sprinkle some rice flour if needed to prevent sticking and make it easier to roll out.
Roll out the dough to about 1 cm thickness and cut the cookies using a cookie cutter in your preferred shape.
Arrange the cookies on a baking sheet lined with parchment paper, keeping them slightly spaced apart.
Bake the cookies in a preheated static oven at 180°C (355°F) for about 15 minutes.
Check the baking time as it may vary depending on your oven and the thickness of the cookies.
Once baked, allow the cookies to cool.
Store them in an airtight cookie tin.
Enjoy them as a snack or for breakfast with a steaming cup of coffee.
