A nutritious recipe, consisting of a second course prepared with lentils, carrots, onion, potatoes, speck, eggs, rosemary, extra virgin olive oil, breadcrumbs
Ingredients
Green lentils – 250 g (8.8 oz / ≈ 1¼ cups)
Carrots – 2 medium (≈ 150 g / 5.3 oz total)
Small onion – 1 onion (≈ 80 g / 2.8 oz)
Potatoes – 2 medium (≈ 300 g / 10.6 oz total)
Speck (smoked cured ham) – 1 slice (≈ 20 g / 0.7 oz, or more to taste)
Hard-boiled eggs – 2–3 eggs
Rosemary – to taste
Extra-virgin olive oil – 1 teaspoon (5 ml / 0.17 fl oz)
Breadcrumbs – 2 tablespoons (≈ 10 g / 0.35 oz)
Method
First cook the lentils.
In the meantime, chop the carrots and onion and cook them in a pan with a teaspoon of oil, a sprig of rosemary and the crumbled slice of speck.
When the carrots are wilted and dry, pour the lentils into the pan, drained from the cooking water.
Stir, let the moisture evaporate, season with a pinch of pepper and possibly smoked paprika.
Meanwhile, cook the whole potatoes in the microwave, perforated or in pieces.
Mash potatoes and lentils with a fork.
Transfer the mixture to a sheet of parchment paper and roll it out, pressing it a little, and trying to obtain a rectangle.
Insert the hard-boiled eggs, duly peeled, in the middle.
Roll the mixture around the eggs, using parchment paper.
Compact the roll with your hands, possibly also using a spatula, until you get a uniform roll.
Sprinkle the surface with breadcrumbs (then remove the excess).
Wrap the lentil meatloaf stuffed with hard-boiled eggs in parchment paper, also closed well on the sides.
Place it in a baking dish and bake it at 200°C (then I lowered it to 180).
Bake for about 40 minutes.
During cooking, turn the roll from time to time to make the surface even.
Remove from the oven and remove the parchment paper.
Allow the meatloaf to cool – or at least cool – before slicing.

The ingredients of the dish bring the following benefits:
Carrots: rich in vitamins (B1, B2, C, PP, E, D), carotenoids, minerals and active ingredients that support the functionality of the immune system and ophthalmic, diuretic and healing functions and act to protect the cardiovascular system. Also suitable for nephropathic patients and useful for the functioning of the liver for the contribution of vitamins, mineral salts and antioxidants. They provide folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Onion: it is rich in selenium which supports the immune system and with the ability to stabilize blood glucose at normal values; it provides quercetin, a flavonoid that helps contain cholesterol and triglyceride levels in the blood, parameters related to cardiovascular risk, which also supports liver function by promoting the purification of the body. Also indicated for nephropathic patients, it is a good diuretic that prevents kidney stones. It provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Lentils: bearer of factors promoting the functionality of the immune system and regulating blood sugar and mineral salts, vitamins and antioxidants that act to protect the cardiovascular system; also suitable for nephropathic patients and useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants
Extra virgin olive oil: source of Vitamin E that protects the immune system from harmful fatty acids

They provide folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Rosemary: rich in principles favorable to kidney function (stimulate diuresis), the cardiovascular system by promoting sweating and liver function by promoting bile secretion.
Speck: provides high levels of proteins, B vitamins, mineral salts and unsaturated fats that contribute to muscle function, metabolism, and the nervous system
Egg: source of Vitamin E that protects the immune system from harmful fatty acids. Rich in Vitamin D that fights mood disorders
