A nutritious recipe, consisting of a baked product of Turkish origin prepared with brewer’s yeast, sugar, flour, salt, extra virgin olive oil, sesame seeds, cumin
Ingredients
For 6 people
300 ml (10.1 fl oz) warm water
½ cube fresh yeast
1 teaspoon sugar
450 g (15.9 oz) all-purpose flour
2 teaspoons salt
2–3 tablespoons extra-virgin olive oil
Sesame seeds and caraway seeds, for garnish
Method
Mix the water, yeast and sugar and let it rest for 10-15 minutes, until it forms foam.
Meanwhile, mix the flour and salt in a large bowl and form a cavity in the center.
Pour 1.5 tablespoons of olive oil and the yeast mixture into the cavity and form a soft dough.
Cover the bowl with plastic wrap and leave it in a warm place for about 45-60 minutes, until the dough has doubled in size.
Transfer it to a floured surface, knead it briefly and cut it in half. Form two round pitas 15-18 cm in diameter.
Line a plate with baking paper and sprinkle it with a little white flour and durum wheat flour.
Place the pitas on top and let it rest again for 30 minutes.
Form a grid pattern on the surface of the bread with your fingertips soaked in olive oil.
Mix the egg yolk and 1.5 tablespoons of olive oil and brush the bread.
Garnish as desired with sesame seeds and German cumin.
Bake the pitas in a preheated oven at 200° for about 20 minutes.
Cover the bread with a damp cloth to keep it warm.
Serve it warm, if possible.
