A substantial first course based on rice, robiola (or other soft local cheese), shallot, celery, white wine, extra virgin olive oil, Grana Padano, rosemary and white pepper.
Ingredients
(for 4 people):
Surperfino rice
4 carrots
80 g of robiola
2 shallots
2 celery stalks
1 litre of water
8 cl of white wine
2 tablespoons extra virgin olive oil
40 g of grated Parmesan cheese
fresh rosemary to taste
Salt to taste
White pepper to taste
Preparation:
Peel and cut the carrots into discs
Bring the required water to the boil in a saucepan.
Add the carrot discs and boil for 6-8 minutes.
Once cooked, move them to a bowl and blend them, adding a little cooking water until you obtain a soft cream.
In a pan with high edges, heat 2 tablespoons of oil and fry a chopped shallot and celery.
Pour in the rice and toast it.
Blend with the wine and let the alcohol evaporate.
Cook the risotto by gradually adding the boiling water used to cook the carrots.
Halfway through cooking, add the carrot cream and a very finely chopped few needles of fresh rosemary.
Finish cooking with the carrot cooking water in moderation.
Season with salt, grind the white pepper and mix with 2 tablespoons of robiola and sprinkle with grated Parmesan cheese.
Decorate the risotto with rosemary needles or flowers.
Serve.
