Ingredients
Method
Prepare the leavened dough by dissolving 25 g of brewer’s yeast crumbled in 5-6 tablespoons of warm whole milk
Add 25 g of sugar.
Add 50 g of rye flour
Knead.
Let the mixture rise for at least 1 hour in a warm place, until it doubles in volume.
Make the dough by putting the remaining 350 g of rye flour (keep 1 tablespoon aside) and 200 g of 00 flour in a bowl
Incorporate the yeast ball, 1 tablespoon of extra virgin olive oil, 1 teaspoon of salt and the remaining lukewarm whole milk, a little at a time.
Knead the dough well for about 10 minutes, until it is firm and no longer sticks to your hands.
Form a ball,
Lightly grease it with oil
Engrave it in a cross
Let it rise in a warm place for at least 2 hours, covered with the damp cloth.
Knead the loaf by taking the dough and knead it for a few minutes on a floured work surface, crushing it well and giving it the shape of a loaf.
Create a deep groove in the center of the bread with the back of your hand
Bring the 2 ends that have formed together towards the center and place the bread thus obtained on the baking sheet lined with paper, keeping the concave part down.
Bake the bread.
Sprinkle the rye bread with milk with the tablespoon of rye flour kept aside
Make 3 incisions on the surface and let it rise for 2 1/2 hours in a warm place. Bake it in a preheated oven at 180-200 ° C for 35-40 minutes
To prevent the bread from drying out during baking, place a small heat-resistant container filled with water in the oven before starting baking
Let it cool down completely
