Presentation
A dessert made with semolina, butter, eggs, sugar, milk, lemon, vanilla, and salt.
Ingredients
For 4 servings:
Preparation
For the caramel: in a thick-bottomed saucepan, let the sugar melt with water over very low heat, without stirring.
When the caramel begins to turn amber, remove from heat.
Immediately pour it into the molds and let it harden.
Pour the milk into a pot.
Add the sugar, some lemon zest, the vanilla pod, and a pinch of salt.
Heat almost to a boil, then remove from heat.
Slowly sprinkle in the semolina, stirring continuously.
Return the mixture to the stove and cook for 4-5 minutes over medium heat, stirring constantly until it forms a creamy but thick consistency.
Turn off the heat, add the butter, and let it cool slightly, stirring often.
Add the egg yolks, one at a time, ensuring they are well incorporated.
Whip the egg whites until stiff, adding a few drops of lemon juice.
Add a small portion of the whipped egg whites to the semolina mixture, stirring vigorously.
Gradually fold in the remaining egg whites, stirring gently from the bottom upwards with a spatula to avoid deflating them too much.
Distribute the mixture into the molds.
Place the molds in a baking dish with boiling water; the water should reach about 2 cm from the top of the molds.
Bake in a preheated static oven at 170°C (340°F) for about 35-40 minutes.
Remove the puddings from the oven.
Let them cool slightly.
Serve.
