Method
Choose medium peppers suitable for filling, all more or less the same size.
Wash them well and clean them well inside, cutting off the top.
Cook the barley in lightly salted boiling water
Drain it and let it cool.
Cook the onion in a pan with the celery stalk finely chopped and the garlic cloves cut in half and a little oil.
As soon as the onion and celery are cooked, remove the garlic cloves and add the barley, thyme, parsley, 1/2 cup broth, Parmigiano Reggiano, and provolone cheese.
Fill the peppers with the barley seasoned in this way
Add a little breadcrumbs on each one and place them “upright” in a sufficiently large baking tray lined with baking paper or aluminum foil.
Add a drizzle of oil and another half cup of broth to make cooking easier. Bake in a preheated oven at 180°C for 45 minutes.
Serve hot or cold.
