A nutritious recipe, consisting of a second course prepared with veal, tomatoes, carrots, potatoes, cabbage, eggs, Parmigiano Reggiano PDO, extra virgin olive oil, garlic, aromatic herbs, salt
Ingredients
(for 4 people)
400 g (14.1 oz) boneless veal sirloin
400 g (14.1 oz) ripe tomatoes
400 g (14.1 oz) baby carrots
200 g (7.1 oz) potatoes
400 g (14.1 oz) savoy cabbage
1 egg
40 g (1.4 oz) Parmigiano Reggiano PDO
40 g (1.4 oz / 1.4 fl oz) extra-virgin olive oil
1 garlic clove
A small bunch of aromatic herbs
Salt, to taste
Preparation
Put the potatoes in a pot of cold water and boil them
In the meantime, cut the tomato with a knife and immerse it in boiling water for about 5 minutes.
Remove the tomato from the skin and cut it into cubes.
Peel the carrots and blanch them in plenty of salted water for about 6 minutes.
Finally, peel the cabbage trying to leave the leaves intact.
Immerse the leaves in boiling water and let them cook for a few minutes, until they become soft.
Gently remove them from the water without breaking them and set them aside to cool.
Mash the potatoes to obtain a puree, add the egg, grated Parmigiano cheese and finely chopped parsley.
Season with salt, if necessary, and let the filling rest for 10 minutes.
Meanwhile, take molds, suitable for baking in the oven, and line them with cabbage leaves, trying to create a conchetta.
Stuff the cabbage leaves with the boiled potato filling and close the pie with a second cabbage leaf.
Bake the cabbage and potato cakes for about 15 minutes in a steam oven.
Place the meat in a baking dish and season it with salt, a drizzle of oil and the laurel, rosemary, sage and parsley.
Leave the meat for about 30 minutes to rest.
Then bake at 180° for about 30 minutes.
When the meat is cooked, cover it with aluminum foil to keep it warm and strain its cooking juices with a fine mesh strainer and pour it into the pan. Let the bottom shrink slightly until you get a sauce.
Take the sirloin and serve it with the carrots, diced tomatoes and cabbage dome
Season with the still hot sauce and serve immediately.

Egg: source of Vitamin E that protects the immune system from harmful fatty acids. Rich in Vitamin D that fights mood disorders
Savoy cabbage: rich in vitamins A and K that help the liver in purification activities and powerful natural anti-inflammatory, able to prevent and alleviate inflammatory and heart diseases.
