A tasty risotto made with Carnaroli rice, pumpkin, white onion, vegetable broth, sage, white wine, Parmigiano Reggiano, butter, extra virgin olive oil, salt and pepper
Ingredients
for 6 people
450 g of Carnaroli rice
800 g of pumpkin
1 white onion
1.5 l vegetable broth
12 Sage leaves
1 glass of white wine
qb of Parmigiano Reggiano
qb of butter
qb of extra virgin olive oil
salt to taste
to taste pepper
Preparation
Peel the pumpkin and cut it into small pieces.
Also peel the onion and chop it finely.
In a pan, heat a knob of butter, add the onion and let it wilt for a few moments, then add the pumpkin.
Pour a ladle of broth and cook for 15 minutes, finally adding salt.
Once cooked, the pumpkin should be reduced to almost a puree.
Separately, in another pan, heat two tablespoons of oil with half of the sage leaves.
Add the rice and toast it for two minutes before deglazing with the white wine. When the wine has evaporated, add the pumpkin puree.
Start cooking the risotto by adding the vegetable stock one ladle at a time, waiting for the previous one to be absorbed.
Continue cooking for about 20 minutes.
Once cooked, turn off the heat, add a generous sprinkling of pepper and stir in the parmigiano.
Serve immediately, garnishing with the remaining sage leaves, chopped not too finely.
