Presentation
First course indicated in case of kidney failure, with ravioli made with protein-free flour and salt with a filling of cabbage, carrot, onion, extra virgin olive oil, soy sauce and ginger
Ingredients
For 12 ravioli:
For the pasta:
100 g (3.5 oz) low-protein flour
80 g (2.8 oz) water
Salt, to taste
For the Filling
100 g (3.5 oz) Savoy cabbage
½ medium carrot
¼ onion
1 teaspoon soy sauce
A pinch of ground ginger or finely minced fresh ginger
Method
For the filling: chop a golden onion and two medium-sized carrots
Finely chop the cabbage.
Put all the vegetables in a large pan, in which you have heated a simple drizzle of oil.
Instead of salt, add the soy sauce and add a little ginger.
Let it cook for 10-15 minutes, stirring frequently and, if you like, add some chilli.
For the ravioli dough, pour the protein-free flour and a pinch of fine salt into a bowl.
Stir and add the water at room temperature
Start stirring with a spoon and then move on to the dough by hand.
If the dough is too soft, add a little flour, on the contrary if it is too hard, add a drop of water.
Flour it well and roll it out with a rolling pin
With a mold or a glass, start making the circles.
Put a teaspoon of filling in the ravioli
Pinch the bottom and then proceed by closing it first on one side and then on the other, taking a little dough each time and folding it on itself; otherwise you can close it like a panzerotto.
Cook them in a pan: you can heat them first for a minute, just with a little oil, to brown the lower part and make it slightly crispy
Add half a glass of water,
Cover with the lid and continue cooking, over medium heat, for 10-15 minutes.
If you don’t have the problem of high potassium, you can also steam them, for 15 minutes, oiling the basket well before laying them down.
