Presentation
A dessert made with a pudding prepared with apples, soy or rice milk, ginger, lemon juice, cinnamon, and agar agar. It can also be served as a snack or for breakfast.
Ingredients
- 450 g apples
- 200 ml soy milk or rice milk
- 1 piece of fresh ginger root
- Juice and zest of an untreated lemon
- 1 cinnamon stick
- 3 g agar agar
- Sugar to taste
Preparation
- Wash the apples, peel them, and cut them into small pieces.
- Place the diced apples in a saucepan.
- Add cinnamon, freshly grated ginger, and lemon zest for flavor.
- Optionally, add sugar and drizzle with the juice of half a lemon.
- Cook the mixture, adding about half of the rice milk.
- Cook over high heat for about 10 minutes.
- Once the apples are soft, transfer them to a blender (removing any cinnamon pieces) and puree with an immersion blender.
- Return the apple puree to the saucepan.
- Mix half a teaspoon of agar agar into the remaining rice milk.
- Add it to the apple puree and bring to a boil.
- Once the mixture boils, transfer it to individual serving bowls and refrigerate for at least a couple of hours to cool.
Allergens
- Agar agar: may cause gastrointestinal discomfort in sensitive individuals.
- Cinnamon: possible reactivity in case of spice intolerance.
- Lemon: intolerance to lemon or possible cross-reactivity in case of grass pollen allergy.
- Apple: individual intolerance to the fruit or cross-reactivity in case of sensitivity to birch.
- Rice: allergy is common in East Asia but rare in Italy and Europe. Possible cross-reactivity in case of sensitivity to grasses.
- Soy: listed as an allergen in EU Regulation 1169/2011, and may cause cross-reactions with grasses, birch, and parietaria.
- Ginger: possible reactivity in case of spice intolerance.
Notes
- Sugar: should be avoided in children undergoing active treatments (potential presence of tumor cells).
It can be replaced with a sweetener (e.g., stevia or erythritol) or a fruit concentrate (e.g., date or quince apple concentrate).
- “Milk” is a very common term but, by law, it can only refer to mammalian milk. In fact, in 2017, the European Court of Justice prohibited the use of the term “milk” for plant-based products. Therefore, the correct term is “beverage” or “drink.”
- It is possible to use regular milk instead of soy or rice beverage.
- Ginger helps combat nausea, has anti-inflammatory properties, aids digestion, and stimulates the immune system.
