Presentation
A dessert, but also a snack, made with stale bread, milk, eggs, sugar, raisins, rum, and lemon zest.
Ingredients
For 8 servings:
- 200 g of stale bread
- 600 ml of milk
- 3 eggs
- 130 g of sugar
- 50 g of raisins (optional)
- q.b. of rum (to soak the raisins)
- 1 teaspoon of lemon zest (grated)
- 100 g of sugar (for caramel)
- 50 ml of water (for caramel)
Preparation
- For the caramel, melt the sugar with the water in a small saucepan without stirring, until the sugar dissolves and turns amber in color.
- Once the caramel is ready, pour it into a pudding mold, swirling it around to coat the sides as well.
- Let it cool.
- Remove the crust from the bread and cut it into cubes.
- Soak the bread in slightly warm milk.
- Soak the raisins in rum.
- Whisk the eggs with the sugar until the mixture is light and frothy.
- Add the softened bread along with the remaining milk.
- Mix well.
- Squeeze the raisins and add them to the mixture.
- Meanwhile, preheat the oven to 180°C (350°F).
- Place the caramel-coated mold inside a larger baking dish that can hold it.
- Pour the egg and bread mixture into the mold.
- Add water to the larger baking dish and bake the bread pudding for 40-45 minutes.
- When the pudding has set on the surface and has slightly shrunk from the edges, remove it from the oven and let it cool.
- Unmold it by inverting the pudding onto a serving plate.
