Dough

For Dusting
Method
Soak the sultanas in rum for 24 hours before making the dough.
Pour the flour into the bowl and create a cavity in the center in which to crumble the yeast
Add the milk and form a soft dough.
Cover with the flour remaining on the edge and let rise for 30-90 minutes, until the volume has increased considerably and the layer of flour begins to split
Pour boiling water over the chopped almonds and let it rest for 5 minutes
Drain them and set them aside.
Incorporate the butter at room temperature, sugar, vanilla sugar, salt and lemon zest into the leavened dough.
Let the dough rise for another 30 minutes.
Preheat the oven to 200 °C.
Also incorporate the almonds and the lemon and candied orange zest into the dough and form the Stollen.
Place the Stollen in the oven on a baking sheet lined with baking paper
Lower the temperature to 170 °C and bake for 60 minutes.
During cooking, check the temperature and adjust it if necessary.
The Stollen should not be too dark or too light, i.e. too dry or not fully cooked.
Spread the liquid butter on the Stollen and sprinkle it with sugar.
Do not move the Stollen, as it is still very fragile. Leave it on the griddle overnight in the cold oven.
The next day, glaze it with the powdered sugar and starch mixture.
You can now transfer the finished Stollen to a transparent bag and wait at least 3 days, if possible a week.

Oranges: provide flavonoids (Vit. P), antioxidants that enhance the action of Vit. C in favor of the immune and cardiovascular systems: also indicated for nephropathic patients; useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. They provide folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Butter: source of fat-soluble vitamins (A, D, E and K) favorable to the health of the eyes, mucous membranes, bones, immune system and blood clotting.
Flour: provides B vitamins (thiamine, niacin, riboflavin and folate), which are important for energy metabolism and the functioning of the nervous system.
Whole milk: provides vitamins, minerals and antioxidants, promoting metabolism, cardiovascular function, tooth and bone health. The presence of tryptophan helps to counteract depression. Provides and promotes the absorption of fat-soluble vitamins (A, D, E.K)
Brewer’s yeast: improves metabolism and helps strengthen the immune system
Lemon: Rich in substances with antioxidant action: vitamin C, beta-carotene, cryptoxanthin, lutein and zeaxanthin, which promote the regeneration of liver cells, the functionality of the immune system and which act to protect the cardiovascular system; also suitable for nephropathic patients and useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. A species that provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Almonds: they are a source of Vitamin E which protects the immune system from harmful fatty acids and mineral salts, vitamins and antioxidants that act to protect the cardiovascular system; also suitable for nephropathic patients. Also useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. Rich in magnesium and omega 3 fatty acids important for regulating mood and cognitive function
Rum: with moderate consumption, alcohol has a favorable action on the functionality of the cardio-vascular system and on mood, reducing stress and anxiety.
Salt: essential for the balance of body fluids and for the transmission of nerve impulses, it is however to be consumed respecting the limit of 5 g per day according to the indications of the WHO so as not to promote arterial hypertension and consequent increase in the risk of cardio-cerebrovascular diseases starting from myocardial infarction and cerebral stroke; to be limited as much as possible in the case of nephropathy.
Raisins (Sultanas): source of antioxidants, including resveratrol, with anti-inflammatory, anticancer properties and able to reduce blood cholesterol levels. It provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
