A nutritious recipe, consisting of a first course prepared with cabbage, carrots, onion, extra virgin olive oil, soy sauce, ginger, flour, salt
Ingredients
for 4-6 people (25-30 ravioli):
For the filling:
400 g (14.1 oz) Savoy cabbage
2 medium carrots
1 onion
1 tablespoon extra-virgin olive oil
2 tablespoons soy sauce
½ teaspoon ground ginger or finely minced fresh ginger
Chili pepper, to taste
For the Dough
300 g (10.6 oz) all-purpose flour (Type 0)
150 g (5.3 oz) water
1 level teaspoon salt
Method
For the filling, grate or chop a golden onion and two medium-sized carrots in a mixer and finely chop the cabbage.
Put all the vegetables in a large pan, in which you have heated a drizzle of oil.
Instead of salt, add 2 tablespoons of soy sauce and add a little ginger.
Let everything cook for 10-15 minutes, stirring frequently and, if you like, add some chilli.
For the ravioli dough, pour the flour and a teaspoon of fine salt into a bowl. Stir and add the water at room temperature and start stirring with a spoon, then move on to the dough by hand.
After 5-10 minutes of kneading, you should get a smooth and homogeneous ball.
Flour it well and roll it out with a rolling pin until it reaches a thickness of about 1 mm
With a mold or a glass, start making many circles.
Put a teaspoon of filling in the ravioli
Pinch the bottom and then proceed by closing it first on one side and then on the other, taking a little dough each time and folding it on itself; otherwise close it in panzerotto.
Cook them in a pan: you can heat them first for a minute, just with a little oil, to brown the lower part and make it slightly crispy, and then add half a glass of water, cover with the lid and continue cooking, over medium heat, for 10-15 minutes.
If you don’t have the problem of high potassium, you can also steam them, for 15 minutes, oiling the basket well before laying them down.
Serviteli played.

Salt: essential for the balance of body fluids and for the transmission of nerve impulses, it is however to be consumed respecting the limit of 5 g per day according to the indications of the WHO so as not to promote arterial hypertension and consequent increase in the risk of cardio-cerebrovascular diseases starting from myocardial infarction and cerebral stroke; to be limited as much as possible in the case of nephropathy.
Soy: provides flavonoids (Vit. P), antioxidants that enhance the action of Vit. C in favor of the immune system and against cardiovascular risk; also suitable for nephropathic patients and useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants. Especially if consumed whole, it provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract the depressed
