Presentation
Dessert consisting of an ice cream prepared with cow’s milk, sugar and egg with the addition of cream, goat’s milk, chestnut honey, decorated with pine nuts.
Ingredients
Hot:
200 g cow’s milk
70 g of sugar
2 small egg yolks
Cold:
100 g cream
135 g goat’s milk
20 g chestnut honey
25 g pine nuts
Preparation
The preparation of this ice cream is divided into two phases:
– pasteurization of the base with cow’s milk and eggs
– the addition of the other ingredients cold so as not to alter both the nutritional and organoleptic properties of the goat’s milk.
Start the preparation of the base by combining eggs, sugar and cow’s milk and mixing everything with an immersion blender.
Put this mixture on the stove until it reaches a temperature of 83°C for a few seconds
Turn off the heat and immediately put to cool in a bain-marie of water and ice.
When this mixture is cold, add cream, goat’s milk and honey and mix with the immersion mixer to dissolve the honey.
Finish cooling in the refrigerator and when the mixture is ready, turn on the ice cream maker and pour to cream.
In the meantime, toast the pine nuts in a pan over low heat and when you turn off the heat, add a knob of butter to the pine nuts and mix them well.
Finally, put the pine nuts on a piece of paper towels to remove excess butter
When the ice cream is ready, add the pine nuts and garnish with more honey if you want.
