METOD
Wash and cut all vegetables into small pieces.
Cook the vegetables in the microwave for 8–10 minutes, then allow to rest for 15 minutes.
Once cooked, blend the vegetables until smooth.
Add breadcrumbs and chickpea flour to the vegetable purée.
Mix with a spoon, then add turmeric, a pinch of pepper, and finely chopped or torn fresh herbs.
Shape the mixture into patties, compacting them with your hands.
Coat each patty with cornmeal, pressing gently to help it adhere.
Place the patties on a baking sheet lined with parchment paper and lightly brush with oil.
Bake at 180°C / 350°F for 15–20 minutes.
For the sauce:
Thicken the kefir with 1 teaspoon of ricotta, mix well, and add a blend of roughly chopped fresh herbs (mint, sage, parsley, rosemary, and basil).
