For 4 servings:
- 125 grams of fresh cream
- 90 grams of grated Grana Padano DOP cheese

- Potato starch
- Dry white wine
- Parsley
- Peanut oil
- Extra virgin olive oil
- Salt
Method
- Cut the carrot and zucchini into thin strips.
- Spread the strips on a tray and sprinkle with salt.
- Let them release their moisture by keeping the tray inclined for 30 minutes.
- Clean the artichokes, cut them in half, remove the inner fuzz, and slice them finely.
- Sauté the artichokes in a pan over high heat with a drizzle of oil, a peeled garlic clove, and a pinch of salt.
- After 1-2 minutes, deglaze with half a glass of dry white wine.
- Lower the heat, cover, and cook for 4-5 minutes. Then turn off the heat and add a sprig of chopped parsley.
- Quickly blend the cream, Grana Padano, 2 egg yolks, half of the egg white, and a pinch of salt.
- Grease 4 small pudding molds (8 cm diameter, 4 cm height).
- Distribute the mixture into the molds.
- Steam them for 16-20 minutes.
- Drain the carrot and zucchini strips, dry them, coat them with potato starch, sift to remove excess starch, and fry them in plenty of peanut oil at 170-180°C until golden brown.
- Drain the fried vegetables on kitchen paper.
- Arrange the artichokes on a serving platter.
- Unmold the puddings and place them on top of the artichokes.
