Presentation
A nutritious recipe, consisting of a second course prepared with celeriac, garlic, rosemary, sage, thyme, oregano, marjoram, onion, pepper, extra virgin olive oil
Ingredients
for 4 people
Celeriac (celery root) – 1 medium (≈ 600 g / 21 oz)
Garlic clove – 1 clove
Aromatic herbs (rosemary, sage, thyme, oregano, marjoram) – to taste (≈ 1–2 tablespoons mixed, fresh or dried)
Onion – 1 small (≈ 80 g / 2.8 oz)
Black pepper – to taste
Extra-virgin olive oil – to taste (≈ 1–2 tablespoons / 15–30 ml)
Method
Wash and peel the celeriac
After peeling it, wash it again
Cut the celeriac in half
Grease the surface of the two parts of celeriac with a little oil by rubbing it with your hands
Flavor with a mixture of aromatic herbs (rosemary, thyme, oregano, marjoram and sage) plus a clove of sliced garlic and pepper.
Wrap the two halves of the celeriac with foil, and leave to rest for a while.
Place the two “packages” in a baking dish and bake at 200°C as they are – that is, with the two celeriac halves still wrapped and without opening the foil – and cook for about an hour
After half an hour, lower to 180°C.
When cooked, remove the foil and slice the celeriac.
After slicing, you can already serve it or make a short passage in the oven to brown the slices a little: arrange the slices in a baking dish, add fresh rosemary, and if you want other herbs to taste.
Also add half a coarsely chopped onion and arrange it on the sides of the slices, even a little below, and a drizzle of oil.
Bake or grill for about ten minutes, or until golden brown
Serve hot

Notes
To be prepared and handled under strict hygienic conditions.
The ingredients of the dish bring the following benefits:
Garlic: has immune-stimulating properties, promotes liver function and the elimination of waste metabolites. It also has hypocholesterolemic, lipid-lowering, antiplatelet, hypotensive and hypoglycemic properties that promote cardiac function.
Onion: it is rich in selenium which supports the immune system and with the ability to stabilize blood glucose at normal values; it provides quercetin, a flavonoid that helps contain cholesterol and triglyceride levels in the blood, parameters related to cardiovascular risk, which also supports liver function by promoting the purification of the body. Also indicated for nephropathic patients, it is a good diuretic that prevents kidney stones. It provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Marjoram: good source of antioxidants that promote the functioning of the cardiovascular system and immune system.
Extra virgin olive oil: source of Vitamin E that protects the immune system from harmful fatty acids
Oregano: provides antioxidants and vitamin E that are conducive to the proper functioning of the immune system
Pepper (green, pink, black, gray, white): contains piperine, a powerful antioxidant; it improves insulin sensitivity by reducing cholesterol levels and activating metabolism. Recommended for people with cardiovascular problems.
Rosemary: rich in principles favorable to kidney function (stimulate diuresis), the cardiovascular system by promoting sweating and liver function by promoting bile secretion.
Sage: contains chlorophyll which has detoxifying properties and promotes the proper functioning of the immune system; also suitable for nephropathic patients. Useful for the functioning of the liver for the supply of vitamins, mineral salts and antioxidants
Celeriac: has diuretic properties. It provides folic acid linked to the production of serotonin and therefore favorable to good mood and counteract depression
Thymus: has a favorable action on liver function (cholagogue or choleretic) and diuretic due to the action of chlorogenic and caffeic acids
