Presentation
A dessert made from a pudding base of almond “milk”, cream, sugar, almonds, cornstarch, amaretto liqueur, and gelatin, served with a sauce made from sugar and grape.
Ingredients
For 12 servings:
- 750 g almond “milk”
- 400 g fresh cream
- 200 g sugar
- 200 g peeled almonds
- 100 g cornstarch
- 90 g amaretto liqueur
- 15 g food-grade gelatin sheets
For the sauce:
- 150 g sugar
- 450 g grape (strawberry variety)
Preparation
- Soak the gelatin sheets in cold water.
- Blend the almonds with the almond “milk”.
- Strain the mixture using a fine sieve lined with cheesecloth.
- Add the cream, 200 g of sugar, and the amaretto liqueur to the strained liquid and stir.
- Pour everything into a saucepan.
- Take 150 g of liquid from the saucepan and use it to dissolve the cornstarch in a small bowl.
- Bring the almond “milk” and cream mixture to a boil.
- Once off the heat, add the dissolved cornstarch.
- Return to a boil, then remove from heat and stir in the soaked gelatin, squeezing out the excess water.
- Brush the pudding molds with a little amaretto liqueur, then pour in the pudding mixture.
- Let it cool, then refrigerate for at least 4 hours.
- For the sauce, cook the grapes with 150 g of sugar in a saucepan for about 10-15 minutes, until it forms a syrupy sauce.
- Garnish the pudding with the sauce and top with fresh grape clusters.
Allergens
- Gelatin: Derived from bovine and porcine collagen, and is therefore not considered an allergen.
- Almonds: Listed among allergens in EU Regulation 1169/2011; may cause cross-reactivity in case of Birch and Grass allergies.
- Cream: Contains lactose and milk proteins.
- Corn: May cause cross-reactivity in case of sensitivity to grasses.
Notes
- Sugar can be replaced with a sweetener (e.g., stevia or erythritol), maple or agave syrup, or fruit concentrate (e.g., date or quince).
- “Milk” is a commonly used term, but by law, it can only refer to the secretion from animals. In 2017, the Court of Justice of the European Union prohibited the use of the term “milk” for plant-based products. It is, therefore, correct to call it “beverage” or “drink”.
- Cream can be substituted with plant-based cream.
- Amaretto liqueur can be used in the recipe for children, as the alcohol evaporates during cooking, leaving only the flavor.
