Presentation
A seasonal first course rich in ingredients: rice, artichokes, shallots, vegetable broth, white wine, parsley, Parmigiano Reggiano DOP, extra virgin olive oil, butter, salt, pepper and lemon zest.
Ingredients
320 g of Carnaroli or Vialone nano rice
2 large shallots
10 artichoke hearts already cleaned of the toughest leaves
600 – 800 ml of hot vegetable broth
half a glass of white wine
a spoonful of chopped parsley
3 tablespoons grated Parmigiano Reggiano DOP
extra virgin olive oil
30 g of butter
salt and pepper
the zest of a lemon (optional)
Preparation
Finely chop the shallot and divide the artichoke hearts into 4.
Heat 3 tablespoons of oil in a heavy-bottomed saucepan
Add the chopped shallot and artichokes and fry gently for about ten minutes.
Season with salt and pepper.
When the artichoke hearts have softened, add the rice and toast it. When it has become translucent, blend with the white wine and let the alcohol evaporate.
Start cooking the risotto by covering it with the vegetable broth: from this moment the cooking time of the rice will begin.
Top up the broth from time to time during cooking, making sure that the rice never remains dry.
Once the artichoke risotto has finished cooking, turn off the heat and add the cold butter cut into small pieces, the grated Parmigiano Reggiano and the finely chopped parsley.
Stir and let rest for 2 minutes.
Serve garnished with a little lemon zest.
